Veggie Dip

Mix all ingredients
- 1 1 1 C mayonnaise (can be subbed with plain whole milk greek yogurt)
- 1 1 1 C sour cream
- 2 2 2 tsp. minced onion
- 2 2 to tsp. chopped fresh parsley (or to taste)
- 2 2 to tsp. chopped fresh dill (or to taste)
- 2 2 2 tsp. salt
Graham Cracker Crust

Mix well & pat in pie pan
- 1 1/2 C graham crumbs
- 1/3 C pwd. sugar
- 1/2 C butter, scant
Arugula, lemon, parmesan & ricotta

Heat oven to 500° Scatter mozzarella slice over dough and brush exposed edge of crust with olive oil
- 3 T olive oil plus more to brush crust
- pizza dough/crust of choice
- 1 ball (8 oz.) fresh mozzarella, thinly sliced
- 5 C packed arugula
- 1/2 C freshly grated Parmesan
- 2 T fresh lemon juice (about 1/2 a lemon)
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 3/4 C ricotta cheese
- balsamic glaze (optional)
Pumpkin Spice Latte Cupcakes

To make the cupcakes, preheat the oven to 350°F
- Cupcakes:
- 2 2/3 C all-purpose flour
- 3 T espresso powder
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/8 tsp. grated nutmeg
- 1/8 tsp. ground cloves
- 1 tsp. salt
- 1 (15 oz.) can pumpkin puree
- 1 C sugar
- 1 C brown sugar
- 1 C canola or vegetable oil
- 4 large eggs
- 1/2 C coffee or espresso, for brushing
- Frosting:
- 2 1/4 C heavy cream, chilled
- 1/4 C confectioners’ sugar
- To finish:
- Ground cinnamon
- Caramel sauce

Preheat oven to 350°. Beat butter and sugar until light and fluffy
- 2/3 C butter, softened
- 1/3 C sugar
- 2 egg yolks (save whites)
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 1/2 C flour
- 2 egg whites
- 3/4 C finely chopped nuts (walnuts)
Pistachio Pudding

Mix pineapple in pudding mix to dissolve
- 1 12 oz. can crushed pineapple
- 1 pkg. pistachio pudding
- 1 C mini marshmallows
- 12 oz. cool whip
Butter Balls

Preheat oven to 350°. Cream butter and sugar; mix in flour and nuts
- 1 C butter
- 4 T sugar
- 2 C flour
- 1 C chopped nuts (walnuts)
Katie’s Cookies

Mix all ingredients. Flour enough for soft dough, make a stiff dough for cutouts
- 2 C brown sugar
- 1 C shortening
- 2 eggs
- 2/3 C sweet milk
- 2 tsp. soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- Flour
Chicken Salad

Combine all ingredients and mix well
- 1 lb. boneless, skinless chicken breast, cooked and shredded
- 1 granny smith apple, peeled and diced
- 1/3 C dried cranberries
- 1 C mayonnaise
- salt, pepper & lemon juice to taste
- walnuts or pecans (optional)
