Chicken with Artichokes and Sundried Tomatoes

Heat olive oil in a large skillet over medium-high heat; cook and stir onion and garlic in hot oil for 1 minute
- 2 tablespoons olive oil
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
- 1/2 cup chicken broth
- 1 (15 ounce) can quartered artichoke hearts, undrained
- 1 (6 ounce) jar sun-dried tomatoes, drained and cut into quarters
- 1 (4 ounce) can sliced olives, drained
- 1 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- freshly ground black pepper to taste
- 1 (12 ounce) package angel hair pasta
- 1 (8 ounce) package crumbled feta cheese

- 4 four-oz tilapia fillets
- 1/3 cup canola mayonnaise
- 1 small chipotle chile in adobo sauce, seeded and finely chopped, plus 1 tsp. sauce
- 1 soft baguette (10 oz.), cut into 4 pieces, each piece split
- 4 leaves red-leaf lettuce
- 4 ears corn, shucked
- 2 tablespoons olive oil
- 8 slices tomato (from 2 large tomatoes)
Almond Amaretto Pound Cake

DIRECTIONS Preheat oven to 325°F
- 1 cup whole milk
- 1 tablespoon white vinegar
- 3 cups all-purpose flour*
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 3/4 cup Dixie Crystals Extra Fine Granulated Sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 2 teaspoons almond extract
- 1/4 cup amaretto
- Amaretto Sauce
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup packed Dixie Crystals Light Brown Sugar
- 1/2 cup Dixie Crystals Extra Fine Granulated Sugar
- 1/3 cup half & half
- 3 tablespoons amaretto
- Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

- 2 cloves garlic
- 1 Tbsp. ginger
- 2 chicken breasts
- Salt to taste
- Black pepper to taste
- 1 cup shiitake mushrooms
- 1 cup cabbage
- 1 cup carrots
- 1/4 cup scallions
- 1 packet of egg roll wrappers
- 1 egg, for egg wash
- Oil for frying
- Hoisin sauce for dipping *optional
