Lexi's CHICKEN FRIED RICE

INSTRUCTIONS Bring brown rice to boil with 1 and ½ cups water in a saucepan over high heat
- INGREDIENTS
- 1 cup brown rice
- 3 chicken breasts, cooked and shredded (I recommend SLOW COOKER CHICKEN TERIYAKI.)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup frozen peas
- 1/2 cup carrots, diced
- 2 eggs
- 3 tablespoons sesame oil
- 1/4 cup soy sauce

make dough: Combine warm water and sugar in the bowl of a stand mixer fitted with a dough hook
- dough:
- 8 hotdogs or sausages (of the pre-cooked variety)
- 1 1/2 c. warm water (110-115°F)
- 1 Tbs. granulated sugar
- 2 1/4 tsp. (1 package) active dry yeast
- 22 oz. (~4 1/2 c.) all-purpose flour
- 2 tsp. salt
- 2 oz. butter, melted and cooled
- water:
- ~3 1/2 quarts of water
- 1 c. baking soda
- 1 large egg, beaten, with a splash of water
- topping:
- coarse salt
- freshly ground black pepper

Directions Combine all ingredients in a large bowl and mix, then let sit for 10 minutes

Place oil in a large, heavy pot over medium heat
- 2 tablespoons olive oil
- 2 pounds sirloin steak, cut into 1-inch cubes
- 1/2 pound ground beef
- 12 ounces chorizo sausage, casing removed, cut into 1/2 cubes
- 1 large yellow onion, coarsely chopped
- 1/4 cup chili powder
- 1 cup cilantro, chopped
- 1 cinnamon stick
- 3 bay leaves
- 2 green jalapenos, slit lengthwise 3 times each
- 1 tablespoon yellow cornmeal
- Salt and pepper, to taste
- 1 tablespoon yellow cornmeal

- 2 teaspoons cumin
- 1 teaspoon dried basil
- 2 (14.5-ounce) cans beef broth

Directions Season pork with ginger and garlic powder and mix thoroughly
- 1 pound ground pork
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 quart peanut oil for frying
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- 2 cups shredded cabbage
- 2 ounces shredded carrots
- 8 (7 inch square) egg roll wrappers

CRISPY PEANUT BUTTER CHICKEN

- For Sauce:
- 1 lb. boneless chicken, cut into "fingers" (lengthwise strips)
- 1/2 cup milk
- 2 Tbsp. creamy peanut butter
- 1 egg
- salt and pepper
- plain dry breadcrumbs and/or cornflake crumbs
- 1/2 cup peanut butter
- 3 Tbsp. soy sauce
- 3 Tbsp. brown sugar
- 1/4 cup water (or more if too thick)
- 1 tsp. or so of honey (optional)

- 1/2 cup Harris Teeter olive oil
- 2 tsp paprika
- 1/4 lb buttery, flaky crackers, finely crushed
