Buffalo Chicken Mac and Cheese

Preheat oven to 350 degrees and butter a 9 x 13 baking dish
- 7 Tablespoons unsalted butter, plus more for the dish
- Kosher salt
- 1 pound elbow macaroni
- 1 small onion, finely chopped
- 2 stalks celery, finely chopped
- 3 cups shredded rotisserie chicken
- 2 cloves garlic, minced
- 3/4 cup Frank's Buffalo Wing Sauce, divided
- 2 Tablespoons all-purpose flour
- 2 teaspoons dry mustard
- 2-1/2 cups half-and-half
- 1 pound extra sharp cheddar cheese, shredded
- 8 ounces pepper jack cheese, shredded
- 2/3 cup sour cream
- 1 cup panko (Japanese breadcrumbs)
- 1/2 cup crumbled blue cheese
- 2 Tablespoons chopped fresh parsley
Parmesan Chicken Casserole

Place diced chicken into a greased 9 x 13 baking dish
- 6 boneless, skinless Tyson chicken breasts, diced
- 1 cup Kraft mayonnaise OR plain Greek yogurt
- 1 cup fresh Kraft shredded Parmesan cheese
- 1 tsp Lawrey’s seasoned salt
- 1/2 tsp McCormick ground black pepper
- 1 tsp McCormick garlic powder
Hot Caprese Dip

- 10 ounces fresh mozzarella
- 3 small Roma tomatoes, seeded and juiced
- 3 tablespoons fresh basil

Salad Nicoise Lemon Vinaigrette

"This is one of my favorite salad dressings
- 1/4 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 cup olive oil
- 2 tablespoons fresh lemon juice
Mashed Potato Casserole-Pioneer Woman

Peel and cut the potatoes into pieces that are generally the same size
- 5 pounds Russet Or Yukon Gold Potatoes
- 2 1/2 sticks Butter, divided
- 1 package (8 Oz.) Cream Cheese, Softened
- 1/2 cup (to 3/4 Cups) Half-and-Half
- 1/2 cup Heavy Cream
- 1/2 teaspoon salt
- 1/2 teaspoon (to 1 Teaspoon) Lawry's Seasoned Salt
- 1/2 teaspoon (to 1 Teaspoon) Black Pepper
Crusty Bread

In a large mixing bowl, whisk together flour, salt and yeast
- Optional Flavors:
- 3 cups unbleached all purpose flour
- 1 3/4 teaspoons salt
- 1/2 teaspoon yeast
- 1 1/2 cups water
- Rosemary, Lemon and Gruyere.
- Add the zest from one lemon, some chopped rosemary (I didn't measure, sorry) and about 1 1/4 cups shredded Gruyere to the dry ingredients, mix. Add water.
- Next flavor:
- Cranberry, orange and almond.
- Add about 3/4 cup cranberries, orange zest from one orange and about 1/2 cups sliced almonds.
- Cheese.
- Add about 1 1/2 cups of cheddar, etc.
Pink Lemonade

Mix in cocktail shaker with lots of ice
- 1 part lemon lime soda
- 1 part cranberry juice
- 2 parts sour mix
- 1.5 parts vodka (citrus)
Beef Stroganoff

Toss beef in a large bowl, with salt, pepper and flour until well coated
- 3 pounds stew beef
- 1/2 cup all-purpose flour
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 large onion, chopped
- 1 1/2 pound cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 1/2 cup beef stock
- 1/2 cup port wine (I used a tawny port)
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 2 tablespoon fresh thyme leaves, chopped (or 2 teaspoons dried)
- 1 tablespoon paprika
- Kosher salt
- Fresh cracked black pepper
- 4 ounces low fat cream cheese, cut into chunks
- 1 cup low fat sour cream
- 1/2 cup fresh parsley leaves, chopped
- Cooked egg noodles
