Honey Sweetened Cucumber Salad

Place cucumber slices in a colander sitting over a bowl
- ◾1 1/2 pounds cucumbers (about 3 medium), peeled, halved lengthwise, and thinly sliced
- ◾1 1/2 teaspoons salt
- ◾1/2 cup white wine vinegar (or substitute rice vinegar)
- ◾1/2 cup water
- ◾3 Tablespoons honey (or substitute same amount of granulated sugar)
- ◾1/8 to 1/4 teaspoon red pepper flakes
- ◾2 Tablespoons finely diced red onion
Buffalo Chicken Mac and Cheese

Bring a large pot of lightly salted water to a boil
- 1 (16 ounce) package elbow macaroni
- 1 rotisserie-roasted chicken
- 6 tablespoons butter
- 6 tablespoons all-purpose flour
- 3 cups milk
- 1 pinch ground black pepper
- 2 cups shredded Cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1/2 cup hot sauce (such as Frank's® Redhot®), or more to taste
- 1/2 cup crumbled gorgonzola cheese Add all ingredients to list
Shrimp Scampi Dip

Just be sure to have some extra bread slices for dipping
- 2 tablespoons unsalted butter
- 8 ounces medium shrimp, peeled, deveined and roughly chopped
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes, or more, to taste
- 1/4 cup white wine*
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste.
- 4 ounces cream cheese, at room temperature
- 1/4 cup sour cream
- 3 tablespoons mayonnaise
- 2 tablespoons chopped fresh parsley leaves
- 1/2 cup shredded mozzarella cheese, divided
- 2 tablespoons grated Parmesan
Chicken and Mushrooms

Cut chicken into serving pieces
- 3 lb Chicken
- 1 lb Mushrooms, sliced
- 2 Garlic cloves, chopped
- 1 Onion, sliced
- 6 tb Olive oil
- 1 tb Butter
- 1/2 c Sherry
- 1/4 ts Basil, crushed
- 1/2 ts Tarragon, crushed
- dash of salt
- dash of pepper
Cowboy Meatloaf and Potato Casserole

Preheat oven to 375 degrees
- 1 1/2 pound Ground beef ; lean
- 3/4 cup Frozen chopped onions ; thawed
- 1/3 cup Bread crumbs ; seasoned
- 1 Egg ; slightly beaten
- 1/4 cup Barbeque sauce
- 1 package Taco Seasoning
- 1/2 teaspoon Salt
- 24 ounce Frozen cut russet potatoes
- 1/2 cup Evaporated milk
- 1 tablespoon Butter
- 1/2 cup Bacon ; crumbled
- 1/2 cup French fried onions
- Salt and pepper ; to taste
- 1 cup Mexican blend cheese ; shredded

Saute meat and drain. In a large pot, saute peppers in a little olive oil
- 1 pound kidney beans ; drained (more or less according to taste)
- 5 cups canned, whole tomatoes
- 1 cup green peppers ; chopped
- 1 1/2 cups onions ; chopped
- 2 cloves garlic ; finely chopped
- 1/2 cup parsley
- 1/2 cup butter
- 2 1/2 pound ground beef
- 1/4-1/3 cup chili powder
- 2 teaspoon salt
- 1 1/2 teaspoon black pepper

Heat a large skillet over medium-high heat and add 2 tbs butter
- 3 boneless skinless chicken breasts
- ⅓ cup butter (divided)
- ½ cup flour
- 8 oz sliced mushrooms
- ¾ cup marsala wine
- ½ cup chicken stock
- ½ tsp salt
- ¼ tsp pepper
- ½ cup shredded mozzarella
- ½ cup parmesan cheese
- 2 green onions, sliced
