Roasted Lemon Pepper Salmon and Garlic Parmesan Asparagus - Cooking Classy

Once you start making one pan meals on a sheet tray you’ll want to make them as often as possible
- 1 1/2 lbs salmon, skin on*
- 2 1/2 Tbsp olive oil, divided
- 1 tsp lemon zest
- 1 Tbsp fresh lemon juice
- 4 cloves garlic, minced, divided
- 1 tsp dijon mustard
- 3/4 tsp onion powder
- 1/2 tsp each salt and fresh cracked black pepper, plus more for asparagus
- 1/2 lemon, thinly sliced (optional)
- 1 1/2 - 2 lbs asparagus (medium or thin spears), tough ends trimmed
- 1/2 cup finely shredded parmesan
Almond Amaretto Pound Cake

Preheat oven to 325°F. Grease a 10-inch bundt pan with baking spray or butter and flour it
- 1 cup whole milk
- 1 tablespoon white vinegar
- 3 cups all-purpose flour*
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 3/4 cup Dixie Crystals Extra Fine Granulated Sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 2 teaspoons almond extract
- 1/4 cup amaretto
- Amaretto Sauce
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup packed Dixie Crystals Light Brown Sugar
- 1/2 cup Dixie Crystals Extra Fine Granulated Sugar
- 1/3 cup half & half
- 3 tablespoons amaretto
- Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
Spicy Ritz Cracker Chicken

- 4 large, boneless chicken breasts - cut into thirds
- 1 1/2 bags of Ritz Crackers
- 2 tsp garlic powder
- 1 tsp cayenne pepper

- All-purpose flour, for dredging

- 1/4 cup extra-virgin olive oil
- 4 ounces prosciutto, thinly sliced (optional)
- 8 ounces crimini or porcini mushrooms, stemmed and halved
- 1 cup sweet Marsala wine
- 1 cup chicken stock
- 3 tablespoon unsalted butter

- 1 1 1 lb chicken breast , boneless and skinless (2 pieces)

Directions In a large bowl, toss the short ribs with the flour
- 3 1/2 pounds boneless beef short ribs, cut into 1 1/2-inch pieces
- 1/4 cup all-purpose flour
- 3 tablespoons extra-virgin olive oil
- 2 cups dry red wine
- 3 cups veal or chicken stock
- 6 carrots, cut into 1/2-inch dice
- 1 1/2 pounds Yukon Gold potatoes, peeled and cut into 1/2-inch dice
- 3 medium parsnips, peeled and cut into 1/2-inch dice
- 1 large onion, cut into 1-inch dice
- 1/2 pound cremini mushrooms, quartered

Bake for 3 hours or until tender
- 2-3 lbs. beef chuck roast
- Salt and pepper
- 3 large onions, coarsely chopped
- 6 large carrots, cut in 1-inch chunks (leave peel on)
- 4 Tbsp. olive oil, divided
- 3 large garlic cloves, crushed
- 1 small can tomato paste, dissolved in 1 1/2 cups of hot water
- 2 Tbsp. instant coffee (use a good quality)
- 1-2 tsp. chili red pepper flakes
- 1 can 14 oz. Guinness beer, about 2 cups
- Sprigs of basil or thyme
