General Tso's Chicken

Coat chicken pieces with egg whihtes
- 4 Chicken breast ; cut into bite size pieces
- Panko Bread Crumbs
- 3 Egg white ; slightly beaten
- General Tso's Sauce
- 2 Green pepper ; cut into strips or Broccoli
- 1 can Bamboo shoots
- Vegetable oil ; for frying
Caramelized Onion & Spinach Olive Oil Quick Bread

Preheat the oven to 350 degrees F
- 3 tsp olive oil, divided
- 1 large yellow onion, cut in half through the root, and thinly sliced
- 1/2 tsp kosher salt
- 2 cups (packed) fresh spinach leaves
- 2 garlic cloves, minced
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 eggs, lightly beaten
- 3/4 cup 2% milk
- 2/3 cup extra-virgin olive oil
- 1 oz. crumbled myzithra (or feta) cheese
- Butter and flour for pan
Penne Bruschetta

Combine tomatoes, oil, basil, vinegar, garlic and pepper
- 4 cups diced plum tomatoes
- 1/3 cup olive oil
- 1/4 cup packed fresh basil, thinly sliced
- 3/4 tbs balsamic vinegar
- 1 tbs minced garlic
- 1/4 tsp pepper
- 1 lb. penne
- 3/4 tsp salt
- 1/4 cup parmesan cheese
The New York Times Chocolate Chip Cookies

1.Sift flours, baking soda, baking powder and salt 2
- 2 cups minus 2 tablespoons (8 1/2 ounces) cake
- flour
- 1 2/3 cups (8 1/2 ounces) bread flour
- I only used all purpose flour for my recipe.
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted butter
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated
- sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/4 pounds chocolate chips
- I used milk and semi sweet chocolate, then also went back and added Reece's peanut butter chips.
Easy Antipasto Skewers

1. Cook tortellini according to package instructions, then rinse in cold water and drain

- Serves about 8-10
- 1 can medium or large black olives
- 1 cup grape tomatoes
- 1 cup of small fresh mozzarella balls
- 1/4 pound salami, thinly sliced
- 1/4 cup fresh basil leaves
- 9 oz package of cheese tortellini
- 1/4 cup Italian dressing

- Directions
- 1 . Cook tortellini according to package instructions, then rinse in cold water and drain.
- 2 . Arrange first 6 ingredients on skewers until skewer is full. Place in a shallow baking dish; drizzle with Italian Dressing. Cover and chill a couple hours or overnight.
Lemon Chicken Orzo Soup

Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat
- 2 tablespoons olive oil, divided
- 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
- Kosher salt and freshly ground black pepper
- 3 cloves garlic, minced
- 1 onion, diced
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 1/2 teaspoon dried thyme
- 5 cups chicken stock
- 2 bay leaves
- 3/4 cup uncooked orzo pasta
- 1 sprig rosemary
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley leaves
Potato Leek Soup

Heat oil and add onions. Saute until light brown
- 2 tablespoon Vegetable oil
- 1 Onion ; thinly sliced
- 4 Leeks ; chopped
- 4 medium Potato ; finely chopped
- 2 can Chicken broth
- 2 cans Water
- Salt & pepper ; to taste
- 2 cups Heavy cream
English Muffin Bread

Mix altogether, then spoon into (4) well greased loaf pans
- 5 1/2 cups warm water
- 3 packages RAPID RISE yeast
- 2 Tablespoons salt
- 3 Tablespoons sugar
- 11 cups flour (I used bread flour, but my Mom always used All-Purpose)
- (Update: You can use regular yeast, but you will need to let is rise TWICE. Once in the bowl, til it reaches the top…and then again in the pans, til it reaches the top. With the RAPID RISE you only need to let it rise once in the pans.)
3-Cheese Mac and Cheese

Preheat oven to 375 degrees F
- 1/2 c. (1 stick) unsalted butter, plus more for baking dish
- 1 lb. elbow macaroni
- 1/2 c. flour
- 5 c. whole milk
- 1 1/2 tsp. kosher salt
- Freshly ground black pepper
- 1 tsp. mustard powder
- 3 c. Cheddar, grated
- 2 c. Gruyere, grated
- 1 1/2 c. Parmesan, grated, divided
- 1 c. panko breadcrumbs
- 3 tbsp. extra-virgin olive oil
- chopped parsley, to garnish

- 1 lemon, sliced
- 1 bottle white wine
- 1 cup white rum
- 4 cups lemonade
- 2 cups champagne
