Skillet Pineapple BBQ Chicken

Heat a large skillet over medium
- 1 Tbsp cooking oil
- 6 boneless skinless chicken thighs* (about 2.3 lbs.)
- Pinch Salt and pepper
- 20 oz. can Pineapple slices in juice
- 1/2 cup BBQ sauce
- 1 jalapeño (optional), sliced thinly
- 2 green onions, sliced
Easy Bolognese Sauce

Heat a large Dutch oven or sauce pot over medium heat
- Ingredients
- 1 pound ground beef lean
- 2 links hot Italian sausage removed from casing and crumbled
- 1/4 cup extra virgin olive oil
- 1 cup white onion chopped
- 1/2 cup carrots chopped
- 1/2 cup celery chopped
- 4 cloves garlic chopped
- 28 ounces crushed tomato
- 6 leaves basil
- 1/2 cup red wine optional
- 1 cup water
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper freshly ground
- Pasta of Choice cooked

- 1 c. dry red wine
- 1 can (28 oz.) crushed tomatoes
- 1/2 c. whole milk
- 3 bay leaves
- 1/2 c. packed fresh basil leaves, torn
- 1 lb. pappardelle pasta, cooked
- Grated Parmesan, for serving
Bisquick Mini Chicken Pot Pies

1 Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
- Chicken Mixture
- 1 tablespoon vegetable oil
- 1 lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 medium onion, chopped (1/2 cup)
- 1/2 cup chicken broth
- 1 cup frozen peas and carrots
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground thyme
- 1 cup shredded Cheddar cheese (4 oz)
- Baking Mixture
- 1/2 cup Original Bisquick® mix
- 1/2 cup milk
- 2 eggs

- 1 1 1 c. heavy cream
- 1 1/2 1 1/2 1/2 tbsp. sugar
- 1/2 1/2 1/2 tsp. pure vanilla extract

Parmesan Crusted Chicken with Arugula Salad

Preheat the oven to 475°
- 1 tablespoon Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon chopped thyme
- Four ; 6-ounce skinless
- Salt ; and freshly ground pepper
- 1/2 cup freshly grated Parmesan cheese ; (1 1/2 ounces)
- 4 cups packed arugula leaves
- 1 cup cherry tomatoes ; halved
French Bread

Makes 3 small or 2 large loaves
- Add the above ingredients together and let sit until bubbly (about 3-5 minutes). Then add:
- 2 1/2 c. warm water
- 2 Tbls. yeast
- 3 Tbls. sugar
- 2 Tbls. white vinegar
- 1 Tbls. salt
- 1/3 c. oil (I use Canola)
- 6-7 c. flour (or a little more if it's too soft), one cup at a time--add enough until the dough is soft, but firm enough to mold into dough loaves

Place the cabbage, carrot, and onions in a large bowl
- 4 cups thinly sliced cabbage
- 1 carrot, grated
- 2 green onions, thinly sliced on the diagonal
- 4 Tbsp Duke’s mayonnaise
- 1 teaspoon French’s yellow mustard
- 2 teaspoons Heinz apple cider vinegar or wine vinegar
- 1/8 teaspoon freshly ground black pepper (more to taste)
