Norwegian Meatballs with Brown Gravy

Directions: Preheat oven to 400 degrees; line a baking sheet with parchment paper
- For the Meatballs
- Whisk Together
- 3/4 cup onion , grated
- 1/4 cup half-and-half
- 2 tablespoons cornstarch
- 1 egg
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground black pepper
- Add and Shape
- Heat
- 1 lb meatloaf mix (or equal parts of gound beef, pork, and veal)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Prepare Brown Gravy
- 4 cups beef broth , divided
- 1 tablespoon beef base
- 3 tablespoons all-purpose flour
- 1 teaspoon Kitchen Bouquet
- salt and pepper

- 3 tablespoons milk
- 1 1/2 cups Italian seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons dried parsley
- 2 tablespoons olive oil
- 4 cloves garlic, peeled and chopped
- 4 pork chops

- 4 boneless skinless chicken breasts (5 oz each)

- 2 tablespoons Hunt's® Tomato Paste
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained

Chicken Diablo

In large skillet, heat oil
- 4 tablespoons olive oil
- 1 1⁄2 lbs chicken breasts, cut into 1 inch pieces
- 3 red bell peppers, sliced
- 8 -10 fresh mushrooms, sliced
- 4 cloves garlic, minced
- 2 cups beef stock
- 1 cup apple juice
- 1 ⁄2 cup crushed tomatoes or 1⁄2 cup tomato sauce
- 2 -3 banana peppers, cut into rings
- 3 tablespoons fresh parsley or 3 teaspoons dried parsley
- salt and black pepper

In 1/3 cup hot olive oil, saute 1/2 cup chopped onions and 1 clove minced garlic for 5 minutes
- 1/3 cup Olive oil
- 1/2 cup Onion ; chopped

- 1 can Tomato paste

- 1 tablespoon Oregano
- 1 tablespoon Basil
- 1/4 teaspoon Pepper
- 1 glugs Red Wine ; (if you have it)

1. In a large saucepan or deep skillet, warm the olive oil at low heat
- 1 tablespoon olive oil
- 8 garlic cloves, thinly sliced
- 4 fresh basil leaves, torn into small pieces
- Two 28-ounce cans crushed tomatoes, with their juices
- 2 teaspoons Kosher salt
- 2 teaspoons balsamic vinegar
