Oatmeal Cookies

Preheat oven to 375 degrees
- 3/4 cup firmly packed brown sugar
- 3/4 cup Crisco
- 1/2 cup granulated sugar
- 1 egg
- 1/4 cup water
- 1 tsp vanilla
- 3 cups Quaker oats (Quick or Old Fashion)
- 1 cup all purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
Hot Italian sausage stuffed dates with lemon basil crèma

For the sauce, whisk together all of the ingredients
- For the sauce:
- 2 tbsp sour cream
- 1 tbsp mascarpone
- 1 tsp lemon zest (from approx 1 lemon)
- 2 tbsp fresh lemon juice
- 3 tbsp chopped basil
- 1/4 tsp kosher salt
- For the dates:
- 12 medjool dates
- 2 links hot Italian sausage
- 1/4 lb sliced bacon (about 6 slices)
- 6 (1/2-inch-thick) slices country-style bread
- 1/3 cup extra-virgin olive oil, plus 1 tablespoon
- 1 Japanese eggplant, cut into 16 (1/4 to 1/2-inch thick) rounds
- 1/2 teaspoon kosher salt
- Zest of 1 large lemon
- 1/2 cup (4 ounces) goat cheese, at room temperature
- 16 jarred sun-dried tomatoes, drained
- 1 medium sweet potato (8 ounces)
- 2 tablespoons extra-virgin olive oil
- 3 large kale leaves
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup ice
- 1 1/2 cups simple syrup, recipe follows
- 1 1/4 cups pomegranate juice, chilled
- 1 cup cranberry juice, chilled
- 1 (750 ml) bottle Prosecco, chilled
- 2 limes, thinly sliced
- 1 bunch fresh mint, for garnish
- 1/2 cup (2 1/2 ounces) pomegranate seeds, for garnish

Honey Lime Shrimp

1.) In a large ziploc bag, combine all the marinade ingredients
- 1/2 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 T honey
- juice of one small lime, or half a large lime (2-3 T)
- zest of one small lime, or half a large lime
- 2 cloves garlic, smashed
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
Greek Chicken with Fettuccine

In a large bowl, whisk together oil, lemon juice, 1/2 tsp salt and 1/4 tsp pepper
- 2 tablespoon Extra virgin olive oil
- 1 lemon Juice of one lemon
- Salt & pepper
- 1 2-2 1/2 lb. Rotisserie chicken ; meat removed
- 8 ounce Feta cheese ; crumbled
- 1 pint Cherry tomatoes ; halved
- 1 tablespoon Fresh oregano
- 1 Red bell pepper ; diced
- 12 ounce Fresh fettuccine
Chicken Tortellini Soup

Add all of the ingredients to a slow cooker except for the tortellini
- 1½ pounds boneless chicken breast
- 3 medium carrots, peeled and diced
- 3 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low sodium chicken broth
- 1 cup water
- 2 bay leaves
- 1 teaspoon Italian seasoning, or more to taste
- 2 cups cheese tortellini
- chopped fresh parsley for serving, if desired
- salt and pepper to taste

Cauliflower Gratin

- 1 large head cauliflower ; cored and cut into florets
- 1 cup heavy cream
- 1 tablespoon all-purpose flour
- 1 cup grated Parmesan
- Coarse ; salt and ground pepper
- 1/2 cup fresh breadcrumbs
- 1 tablespoon unsalted butter ; cut into small pieces

- Ingredients for garlic wine:
- 9 garlic cloves
- 2 sprigs of thyme
- 2 sprigs of tarragon
- 1/4 teaspoon freshly crushed peppercorns
- 1 cup dry white wine or dry French vermouth
- Ingredients for chicken:
- 3/4 cup Garlic Wine (recipe follows)
- 4 boneless chicken breast halves
- Coarse kosher salt and freshly ground pepper
- Flour, for dredging
- 2 tablespoons clarified butter
- 1 tablespoon extra virgin olive oil
- 2 teaspoons fresh tarragon, plus additional for seasoning
- 1/3 cup heavy cream
White Queso Dip

Heat 1/2 and 1/2 over medium/high heat in a small saucepan
- 3/4 lb good quality white american cheese (buy it sliced at the deli counter at your grocery store. Then chop into small squares), finely chopped
- 4 ounces (1/4 pound) good quality fontina or mozzarella cheese, shredded
- 1 cup half-and-half
- 2 tablespoons canned jalapenos, finely chopped (You can also use Green Chiles. I love Old El Paso SO MUCH for both types!)
- 1 teaspoon chili powder (you could also use cumin if you prefer that taste)
- 1/2 teaspoon ground nutmeg (optional. some readers haven't liked this spice although some did, SEE NOTE) ***
- 1 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- chopped cilantro, tomatoes, and jalapenos for garnish
