- 2 cups vodka
- 1 cup cranberry juice
- 1/2 cup triple sec

- 3/4 cup Water
- 3/4 cup Vegetable oil

- 3/4 cup all-purpose flour
- 1/4 tsp salt
- 1 [14] oz can sweetened condensed milk
- 1 egg white beaten until frothy

- 24 chocolate kisses unwrapped

- 1 (15-ounce) can chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 1/4 cup tahini
- juice of 1 medium lemon
- 2 tablespoons water
- 2 cloves garlic, roughly chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- pinch of cayenne pepper, or to taste
- 1 (8 ounce) package frozen chopped spinach, thawed & squeezed dry
- 1/3 cup chopped canned artichoke hearts (drain then chop!)
- extra olive oil, for drizzling
Cranberry Upside Down Cake

Use a 9-inch round or an 8-inch square cake pan with 3-inch sies
- Topping
- 4 tablespoons (1/2 stick) unsalted butter
- 3/4 cup brown sugar, packed
- 2 3/4 cup fresh cranberries
- 1/4 cup orange juice
- Batter
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 pound (1 stick) unsalted butter, room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs, separated
- 1/2 cup whole milk
- 1/4 teaspoon cream of tartar
Cilantro-Lime Chicken

Make marinade: Whisk together 2 tablespoons olive oil, cilantro, lime juice, red pepper flakes, garlic, and cumin
- 4 bone-in, skin-on chicken thighs
- extra-virgin olive oil
- 1/4 c. Chopped cilantro
- Juice of 2 limes
- pinch of crushed red pepper flakes
- 2 cloves garlic, minced
- 1/2 tsp. cumin
- cooked white rice, for serving
French Onion Chicken Skillet

Preheat oven to bake at 400 degrees OR broil on low
- 2 pounds Vidalia onions, sliced
- 2 pounds boneless, skinless chicken breasts or thighs
- 2 cups beef broth
- 1 cup swiss cheese, grated
- 1/3 cup extra-virgin olive oil, divided
- 2 tablespoons all-purpose flour
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- Kosher salt and freshly ground pepper, to taste
Crispy Oven Fried Chicken

Place the chicken pieces in a large zip top bag and set aside
- For the marinade:
- 2-3 pounds chicken parts I like legs and thighs the best!
- 2 cups low-fat buttermilk
- juice and zest of 1 lemon
- 1 tablespoon hot sauce I use Tabasco in this recipe
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground pepper
- For the coating:
- 1 1/2 cups Rice Krispies cereal
- 1 1/2 cups corn flakes
- 1 1/2 cups panko bread crumbs
- 1 cup all purpose flour
- 1/2 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 8 tablespoons butter
Forgotten Chicken

Using the 1 tbsp. butter, butter a 9 x 13 baking pan
- 1 lb Tyson boneless skinless chicken breasts
- 2 cups Uncle Ben’s Minute rice (I used brown rice)
- 1 can Campbell’s cream of mushroom soup
- 1 can Campbell’s cream of chicken soup
- 1 can of water (use one of the soup cans)
- 1 tbsp. Land O Lakes butter
- 1 envelope Lipton onion soup mix
Eggnog Bread with Rum Glaze

Preheat oven to 350. Spray your loaf, muffin etc
- Rum glaze:
- 2 eggs
- 1 and 1/2 cups of regular eggnog (not low fat)
- 2 tsp Spiced Rum
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1/2 cup butter @ room temperature
- 2 1/4 cup all purpose flour
- 1 (3.4 ounces of powdered) package of instant French vanilla pudding mix
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1 cup sifted confectioners sugar
- 2 tsp eggnog
- 2 tbl Spiced Rum
- 1/8 tsp of ground nutmeg
- Whisk together and pour over your cooled eggnog bread.
