Asian Meatballs

Grease a baking sheet with cooking spray
- Meatballs:
- 1 1/2 lb ground pork
- 1 tablespoon finely chopped ginger
- 1/3 c. water chestnuts, finely chopped
- 1/2 small onion, chopped
- 1/2 small jalapeno, seeded and chopped
- 2 tablespoon chopped cilantro
- 3 cloves garlic, finely chopped
- 2 tablespoons soy sauce
- 1/2 c. bread crumbs
- 1 large egg, beaten
- Sauce:
- 1 tsp. finely chopped jalapeno, seeded
- 3 cloves garlic, finely chopped
- 1 tablespoon cilantro
- 2 tablespoons soy sauce
- 1 tablespoon ginger
- 1/2 c. barbecue sauce
- 1/2 c. duck sauce
- 1/2 c. sweet and sour sauce
- 1/4 c. hoisin sauce
- 1/4 c. chicken broth
- 4 scallions, white and green parts, thinly sliced
Pumpkin Chili with Chicken

Warm oil in a large pot over medium heat
- 3 tablespoons olive oil
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno pepper, finely chopped
- 2 cloves garlic, minced
- 1 1/2 lb. ground (or shredded) chicken
- 2- 15oz cans of diced tomatoes
- 1- 15oz can of pumpkin puree
- 2 c. low sodium chicken broth
- 1 1/2 tablespoon chili powder
- 1 tablespoon cumin
- salt and pepper
- 1- 15oz can of kidney beans, drained and rinsed
- 1- 15oz can white kidney beans, drained and rinsed
Three Cheese Scalloped Potatoes

Bring a large pot of water to a boil
- salt and pepper
- 4 lb baking potatoes, scrubbed
- 1 tablespoon butter
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 1/2 c. shredded gruyere cheese
- 1 1/2 c. shredded cheddar
- 3/4 c. grated parmesan
- 1 tablespoon chopped thyme
- 2 c. heavy cream
- 3 bay leaves
Arroz Con Pollo

In 12-inch skillet, heat oil over medium-high heat until hot
- 1 tablespoon olive or vegetable oil
- 4-6 boneless skinless chicken breasts
- 1 large onion, coarsely chopped
- 1 1/4 cup instant brown rice
- 1 teaspoon ground cumin
- 2 cups chicken broth
- 3/4 chunky salsa
- 1 red bell pepper, coarsely chopped
Chocolate Thumbprints

Good for holidays (decorate with crushed peppermint of holiday m&ms) OR alone for other occasions
- Cookies:
- 1 1/2 cup sugar
- 1 1/2 cup butter or margarine, softened
- 1 teaspoon vanilla
- 2 egg
- 2 1/2 cups all-purpose flour
- 6 tablespoons unsweetened baking cocoa
- 1/2 teaspoon salt
- Fudge Filling:
- 1/4 cup whipping cream
- 1 cup milk chocolate chips
Individual Cherry Crips

Preheat oven to 350ºF. Step 2Spread cherries evenly in 4 lightly greased 4-inch ramekins; set aside
- 3 cups fresh cherries, pitted
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/3 cup rolled oats
- 1/2 teaspoon baking powder
- 1 egg, lightly beaten
- 1/4 teaspoon ground cinnamon
- 1/4 cup butter, melted
Pineapple Planter's Punch

Combine pineapple juice, orange juice and lemon juice in a large bowl or pitcher
- 4 cups unsweetened pineapple juice
- 2 cups orange juice
- 1/2 cups fresh lemon juice
- 2 liters of ginger ale, chilled
Chicken Noodle Soup

In a pot, warm oil over medium heat
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 medium onion, diced
- 2 carrots, diced
- 2 ribs celery, diced
- salt and pepper
- 14.5 oz chicken broth
- 1- 1 lb bone in chicken breast with skin on
- 8 oz. thin egg noodles
- 2 tablespoon chopped fresh parsley
Caramel Apple Hand Pies

Make the dough: Whisk together the flour, salt and baking powder in a large bowl
- For the dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup (2 sticks) cold unsalted butter, cut into cubes
- 1/2 cup cold sour cream
- For the filling:
- 2 cups small diced (peeled) Granny Smith apples (See Kelly's Notes)
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon cinnamon
- 1/4 cup sugar
- 2 teaspoons all-purpose flour
- 8 store-bought soft caramels, roughly chopped
- Large flake sea salt (See Kelly's Notes)
- Egg wash (1 egg lightly whisked with 1 Tablespoon water)
- Crystal sanding sugar (optional)
White Chocolate Raspberry Cheesecake

In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter
- 1 cup chocolate animal cracker crumbs
- 3 tbsps white sugar
- 1/4 cup melted butter
- 12 ozs raspberries (frozen)
- 2 tbsps white sugar
- 2 tsps cornstarch
- 1/2 cup water
- 2 cups white chocolate chips
- 1/2 cup cream (substitute)
- 24 ozs cream cheese (softened)
- 1/2 cup white sugar
- 3 eggs
- 1 tsp vanilla extract
