Chicken Enchiladas- My Way

- 3 cups shredded cooked chicken breast
- 1 bag green enchilada sauce
- 1/4 teaspoon kosher (coarse) salt
- 1/4 teaspoon freshly ground pepper
- 1 green and 1 red bell pepper, chopped
- tomato salsa
- shredded Monterey Jack and cheddar cheeses
- 10 flour tortillas
Peanut Butter Fudge

Combine butter, sugar, cream and corn syrup in a large sauce pan
- 6 tablespoons butter
- 3 cups sugar
- 1 c. heavy cream
- 1 tablespoon light corn syrup
- 1- 16oz jar creamy peanut butter
- 1- 7.5oz jar marshmallow creme
- 2 tsp. vanilla

Banana Cinnamon Cake

Heat oven to 350°F (325°F for dark or nonstick pan)
- Cinnamon Glaze:
- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1/2 cup water
- 1 cup mashed very ripe bananas (2 medium)
- 1/2 cup butter or margarine, softened
- 2 teaspoons ground cinnamon
- 3 eggs
- 1/2 cup chopped walnuts
- 1 8ox pkg cream cheese
- 1/4 c. butter, softened
- 1 teaspoon vanilla
- 4 c. powdered sugar
- 2 to 3 teaspoons milk, give or take until right texture
- 1/2 teaspoon ground cinnamon

In a large ziploc bag, combine 1 tablespoon soy sauce, sherry or broth, salt, garlic powder, and ginger
- 1 tablespoon plus 2 teaspoons reduced-sodium soy sauce, divided
- 1 tablespoon sherry or reduced sodium chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1 pound boneless, skinless chicken breasts, cubed
- 1 20 ounce can of unsweetened pineapple chunks
- 2 tablespoons plus 1/3 cup cornstarch, divided
- 2 tablespoons sugar
- 1/4 cup cider vinegar
- 1/4 cup ketchup
- 1 tablespoon olive oil
- 2 cups hot cooked rice
- sliced green onion, optional
Caramel Apple Cider Donuts

Preheat oven to 350° F coat your Donut Pan with cooking spray
- Donuts:
- 2 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 1/2 cups unsalted butter
- 1 1/2 cups sugar
- 3 eggs
- 3 egg yolks
- 1 cup unfiltered apple cider
- Needs New Icing:
