Preheat oven to 425F degrees
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs, room temperature preferred
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 1 and 1/2 cups fresh or frozen blueberries
Smoky Chicken Soup

Sautee onion and celery with olive oil in a large pot
- 1 onion, chopped
- half a bunch of celery, chopped
- olive oil
- few cloves of garlic, chopped
- 8 c. chicken broth
- Half a can hominy, rinsed
- Sm. can of black beans, rinsed
- 6 chicken breasts, cooked and shredded
- 3 whole chipotles in adobo, chopped
- Shredded cheese for topping
Chocolate Peppermint Poke Cake

Heat oven to 350°F (325°F for dark or nonstick pan)
- Cake:
- 1 box Betty Crocker® SuperMoist® chocolate fudge cake mix
- Water, vegetable oil and eggs called for on cake mix box
- Filling:
- 1 box (4-serving size) white chocolate instant pudding and pie filling mix
- 2 cups milk
- 1/2 teaspoon peppermint extract
- Frosting:
- 1/4 teaspoon peppermint extract
- 1 container Betty Crocker® Whipped milk chocolate frosting
- 3/4 cup coarsely chopped chocolate-covered peppermint patties (8 candies)

- 1 lb red potatoes, chopped
- 3/4 lb skinless salmon fillet, chopped
- 1 sm. bag frozen corn, thawed

- 1/4 cup sugar
- 1/8 cup all-purpose flour
- 2 tbsp cornstarch
- Chocolate Lining:
- 2-3 oz. semisweet chocolate, melted
- Fruit Topping:
- 2 – 3 cups of fresh mixed fruit, such as blackberries, blueberries, raspberries,strawberries, kiwifruit, small plums, etc., gently washed and dried.
