Pineapple Shrimp Fried Rice

A fried rice dish made with brown rice, shrimp and pineapple
- 1 1/2 cups (uncooked) brown rice
- 1 teaspoon oil
- 1 1/4 pound shrimp, shelled and deveined, chopped into chunks (1 pound after peeled)
- 1 1/2 cups fresh pineapple, cut into small chunks
- 5 large scallions, chopped
- 3 cloves garlic, minced
- 1 fresh chili pepper or jalepeno, chopped
- 2 teaspoons soy sauce, or to taste
- 1 tablespoon fish sauce
- Cilantro for garnish
Avocado (creamy) Ranch Salad Dressing

Whenever you are going to have a creamy dressing, fat comes along
- 1 avocado, roughly chopped
- 1/2 cup Greek yogurt
- 2 TBSP vinegar
- 2 tsp. olive oil
- 4 tsp. lemon juice
- 1/2 cup fresh chives, coarsely chopped
- 1/4 cup fresh parsley
- 4 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp sea salt
- 1/2 tsp pepper
- 1 cup buttermilk
Chocolate Peanut Butter Pretzel Bars

- Peanut Butter Base Ingredients
- 6 tablespoons unsalted butter, melted
- 3/4 cup peanut butter
- 1 1/2 cups pretzels crushed in a food processor but not too fine, you want some chunks
- 1/2 cup confectioners’ sugar
- 1/4 teaspoon salt
- Chocolate Ganache Ingredients
- 1 heaping cup semisweet chocolate chips, such as Ghirardelli 60% chocolate chips
- 1/3 cup heavy cream
Sugar Cookies - "Melt in your mouth"

- 1 cup butter, at room temperature
- 1 cup oil (canola or vegetable oil)
- 1 cup sugar
- 1 cup icing sugar (powdered sugar)
- 2 eggs
- 1 tsp vanilla
- 4 cups flour
- 1/2 tsp salt
- 1 tsp cream of tartar
- 1 tsp baking soda
Healthy Chewy Chocolate Granola Bars

Chewy Granola Bars. No corn syrup
- 1/2 cup peanut butter or sun butter
- 1/3 cup honey
- 1/4 cup coconut oil (or another oil of your choice)
- 1 cup oats
- 1 cup total of any combination of: sesame seeds, coconut flakes, sunflower seeds, dried fruit, mini chocolate chips

- Orange Pound Cake
- 1/2 pound (2 sticks) unsalted butter at room temperature
- 2 1/2 cups sugar, divided
- 4 extra-large eggs at room temperature
- 1/3 cup grated orange zest (6 oranges)
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed orange juice, divided
- 3/4 cup buttermilk at room temperature
- 1 teaspoon pure vanilla extract
- ORANGE SYRUP
- 1/4 Cup of sugar
- 1/4 cup orange juice
- TRIFLE INGREDIENTS
- 1 cup good raspberry jam
- 2 half-pints fresh raspberries
