Roasted Tomato Sauce

- 6-10 Roma tomatoes, root end trimmed away
- 1 yellow onion
- 1 bell pepper
- however much garlic you feel like peeling (2 heads if you’re not in a hurry)
- olive oil
- salt and pepper

- Flaky Pie Crust
- Adapted from Tish Boyle, with my revisions
- 2 1/2 cups all-purpose flour, chilled
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 12 tablespoons unsalted butter, cut into 1/2 inch chunks and frozen
- 1/4 cup lard or vegetable shortening, frozen
- 6 to 8 tablespoons ice-cold water ( I add 1 tablespoon apple cider vinegar and remove 1 tablespoon water in all pie crust recipes – it tenderizes the crust)
- Cheesecake Layer
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon pure vanilla extract
- 1 egg
- Pumpkin Pie Layer
- 1 2/3 cups unsweetened fresh or canned pumpkin puree (If using canned, strain in a fine mesh sieve for several hours to overnight, covered, in the fridge)
- 1 cup heavy cream (you can use evaporated milk, if you prefer)
- 1/2 cup firmly packed brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 eggs, lightly beaten
- Pecan Pie Topping
- 1 cup mix of whole and coarsely chopped pecans
- 1/4 cup granulated sugar
- 1/4 cup firmly packed dark brown sugar
- 1/3 cup light or dark corn syrup
- 1 teaspoon vanilla extract
- 2 eggs beaten
- 1/2 teaspoon salt
- 2 tablespoons melted butter

Crush the pretzels in a food processor or however you like to crush pretzels
- Betty Crocker Sugar Cookie Mix and all the ingredients the mix calls for or do like I did and make it from scratch with these ingredients:
- 2 1/2 cups crushed butter pretzels
- 1 cup melted butter
- 5 tbsp sugar
- 1- 1/2 cups butter, softened
- 2 cups white sugar
- 4 eggs
- 1 tsp vanilla extract
- 5 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup Heath Bits
- Brownie Mix (13×9 family size box + all the ingredients the mix calls for) (OR your favorite home made brownie recipe, which I will probably use)
Strawberry Crumb Bars

- 1 pound sweet italian sausage links, cut into 1-inch pieces
- 3 baking potatoes (about 1 1/4 pounds), peeled and cut into 1-inch pieces
- 1/2 pound mushrooms, quartered
- 1 onion, coarsely chopped
- 2 cloves garlic, finely chopped
- 2 tablespoons extra-virgin olive oil
- Salt and pepper
- One 28-ounce can crushed tomatoes with italian herbs
- 1/4 bunch, flat-leaf parsley, coasrsely chopped
Red Velvet Cheesecake

Creamy and rich cheese cake with a nice textural contrast from the red velvet cake pieces
- CRUST:
- Buy 2 Red Velvet Cake Mixes
- 1/2 Red Velvet Cake Mix (1 3/4 C)
- 1/2 stick soft butter
- 1 egg
- 1/2 C mini semi-sweet chocolate chips
- Mix dry ingred. and butter until crumbly, add egg, spread in greased spring form pan. Bake 8 minutes
- CAKE
- Mix as directed, BUT SUBSTITUTE melted butter for oil, and add one extra egg. Bake as directed.
- Cheesecake: Rich and creamy New York style
- 32 oz cream cheese
- 16 oz regular (not low fat) sour cream
- 2 cups sugar
- 2 teaspoon vanilla
- 6 eggs
- White Chocolate Ganache
- 4 ounces (1/2 C) white chocolate chips
- 1/2 cup heavy cream
- 1 tsp vanilla
