Maple Shortbread with Sea Salt

Spray your 9" tart pan with cooking spray or lightly butter and set aside
- 1 2/3 Cups Unbleached All Purpose Flour
- 1/3 Cup Sugar
- 3/4 Cup Unsalted Butter, cold and cut into 1 inch cubes
- 3 Tablespoons Pure Maple Syrup
- (roughly) 1/2 Teaspoon Sea Salt

- 2 3/4 C flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 C unsalted butter, room temp.
- 1 3/4 C sugar
- 4 eggs
- 2 TBS fresh lemon juice
- 1 TBS lemon zest
- 1 1/2 tsp vanilla extract
- 1 C buttermilk
- 1/2 C sour cream
- 1 1/2 C blueberries tossed in 1 TBS flour
- 1/2 C blueberries for garnishing
- GLAZE
- 1 1/2 C confectioners sugar
- 4 tsp fresh lemon juice
- 3 tsp limoncello (or subst. lemon juice)
- 1 tbs maple syrup
Swiss & Onion Dip

- 2 mild onions, thinly sliced

- 1/2 teaspoon baking powder
- 1 tablespoon granulated sugar
- 1/8 teaspoon salt
- 1/8 teaspoon grated whole nutmeg
- 1 cup egg substitute
- 1 cup fat-free milk $
- 2 tablespoons butter, melted $
- 1 teaspoon vanilla extract
- APPLE MIXTURE:
- Cooking spray $
- 1/2 cup granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon grated whole nutmeg

A light and refreshing Crisp Cucumber Salsa
- 2 cups seeded peeled cucumber, finely chopped
- 1/2 cup seeded tomato, finely chopped
- 1/4 cup red onion, chopped
- 2 tablepoons fresh parsley, minced
- 1 jalepeno pepper, seeded and chopped
- 4 1/2 teaspoons fresh cilantro, minced
- 1 garlic clove, minced or pressed
- 1/4 cup reduced-fat sour cream
- 1 1/2 teaspoons lemon juice
- 1 1/2 teaspoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon seasoned salt

Chocolate Chip Pizza

Preheat oven to 400 degrees
- baking pan, approximately 10×15 inches
- 1 THIN pizza crust in a can
- 2 sticks of butter, melted
- 1 box of yellow cake mix
- 1 bag of chocolate chips
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
Apple Dumplings

This Apple Dumpling is quick and easy using refrigerated crescent rolls
- 2 sticks butter, (I would like to try with only one stick of butter, next time)
- 1 teaspoon vanilla
- 1 1/2 cups sugar
- 2 tubes crescent rolls
- 2 granny smith apples
- 12 ounces of Mountain Dew (use only half the can)
- 2 teaspoons cinnamon
- 1/2 cup pecans, chopped
Mexican Quinoa

A take on the classic“Mexican”rice with quinoa
- 1 tablespoon corn oil
- 1/2 cup onion, diced
- 1 clove garlic, chopped
- 1 teaspoon cumin, toasted and ground
- 1 teaspoon chipotle chili powder
- 1 cup quinoa, rinsed
- 1 1/2 cups chicken or vegetable broth
- 1/2 cup diced tomato or 1/4 cup tomato puree
- 1/2 teaspoon oregano
- salt and pepper to taste
- 1 handful cilantro, chopped
Key Lime Coconut Snowballs
