Pumpkin Spice Oreo Pumpkin Blondies

Soft pumpkin bars and buttery blondies rolled into one easy, no-mixer recipe
- 1 cup unsalted butter (2 sticks), melted
- 2 large eggs
- 1 3/4 cup light brown sugar, packed
- 1 Can pumpkin puree (not pumpkin pie filling)
- 1 teaspoon vanilla extract
- 1 teaspoon Pumpkin Spice Coffee Syrup
- 3 teaspoons pumpkin pie spice
- 2 1/2 cups all-purpose flour
- 1 pkg Pumpkin Spice Oreo's
- 1 Can Sweetened Condensed Milk
- 1 C Hershey's Dark Chocolate Chips
- 3/4 C. Semi Sweet Mini Chocolate Chips

Grandma Raice's "a cup, a cup, a cup" recipe
- Preheat oven to 350
- 1 C white sugar
- 1 C brown sugar
- 1 C oil
- 1 C butter
- 1 egg
- 3 1/2 C flour
- 1 tsp salt
- 1 tsp cream of tartar
- 1 C Rice Krispies cereal
- 1 C coconut
- 1 C oatmeal
- can use 1/2 WW flour and/or multigrain oatmeal, if desired*

Asian Ginger Salad Dressing

In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water
- 3 cloves garlic, minced
- 2 tablespoons minced fresh ginger root
- 3/4 cup olive oil
- 1/3 cup rice vinegar
- 1/2 cup soy sauce
- 3 tablespoons honey
- 1/4 cup water
Peanut Butter "healthy" Cake

The creamy beans are not even noticed in the cake – they act as a sort of egg replacer
- wet:
- 1 16oz. can of white cannellini beans, rinsed, then well drained
- 1 small banana OR 1/2 avocado, blended with beans
- 1 tsp vanilla extract
- 1/3 cup plus 1 Tbs peanut butter, salted/creamy
- 1 cup almond milk
- 1 egg
- 4 Tbsp maple or agave syrup
- 1 tsp apple cider vinegar
- 1/4 C + 1 Tbsp virgin coconut oil, liquid form/soften
- dry
- 1 3/4 cups whole wheat flour
- 1/2 C Quinoa flour 3/4 C white flour
- 1 cup plus 2 Tbs organic sugar
- 1 1/4 Tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp chia seeds (optional – helps to bind a bit)
Roasted Tomato Marinara

- Ingredients (Makes 4 cups of Sauce)
- 4 Large Tomatoes, roughly diced
- 1 lb. Cherry Tomatoes, halved
- 4 Cloves of Garlic, peeled and halved
- 1/3 Onion, roughly diced
- 1 Teaspoon of Salt
- 1/2 Teaspoon of Pepper
- 3 Tablespoons of Olive Oil

- 1/3 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1 teaspoon coconut extract

- 1 1/2 teaspoons baking powder
- Milks Sauce Ingredients:
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 fluid ounce) can evaporated milk, minus 1/2 cup
- 3/4 cup coconut milk
- Coconut Pastry Cream Ingredients:
- 1 can (14 fluid ounces) coconut milk
- 3/4 cup sugar
- 3 teaspoons vanilla extract
- pinch kosher salt
- 3 large egg yolks
- 2 tablespoons corn starch
- 2 tablespoons unsalted butter
- 1 cup sweetened coconut flakes
- 1/2 cup heavy whipping cream
- Whipped Cream Ingredients:
- 2 cups heavy whipping cream
- 6 tablespoons icing sugar

Ultimate S'More Anniversary Cake

- Adapted from King Arthur Flour Fudge Brownie recipe
- 2 sticks unsalted butter
- 2 1/4 cups sugar
- 4 large eggs
- 1 1/4 cups Double-Dutch Dark Cocoa or Dutch-process cocoa
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon espresso powder (I used instant coffee)
- 1 tablespoon vanilla extract
- 1 1/2 cups All-Purpose Flour
- 2 cups chocolate chips (I used semi sweet)

- 1 1/4 pounds cream cheese (20 oz), room temperature
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
