Chocolate Sheet Cake

Delicious!
- Bring to boil:
- 1 stick of butter
- 1 cup of water
- 4 TBS of Cocoa
- Remove from heat and add:
- 2 cups of flour
- 2 cups of sugar
- 1 tsp of salt
- 1 tsp of baking soda
- Beat in:
- 2 eggs
- 1/2 cup of sour cream
- Pour into large greased cake pan. Bake on 350 for 20 minutes. Let cool 10 minutes.
- Icing recipe:
- Bring to boil:
- 4 TBS Cocoa
- 6 TBS milk
- 1 stick of butter
- Remove from heat and add:
- 1 pound of powdered sugar
- 1 tsp vanilla
- 1 cup of chopped walnuts (optional)
- Pour over cake and spread.
Roasted Sweet Potatoes

Preheat the oven to 350 degrees
- 3 sweet potatoes, peeled and cut into bite size cubes
- 2 tsp olive oil
- 1 tbsp butter
- 1 tbsp of brown sugar (organic)
- 1 tsp of ground cinnamon
- 1/4 tsp of ground nutmeg
- Pinch of ground ginger
- Sea salt to taste
Ham Potato Puffs

Press each biscuit onto the bottom and up the sides of a greased muffin cup
- 1 tube refrigerated buttermilk biscuits
- 1 cup cubed fully cooked ham
- 1 cup leftover mashed potatoes
- 1 cup (4 oz) shredded cheddar cheese, divided
- 1/2 tsp dried parsley flakes
- 1/4 tsp garlic powder
Slow Cooker Salisbury Steak

In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands
- 2 pounds lean ground beef
- 1 envelope dry onion soup mix
- 1/2 cup Italian seasoned bread crumbs
- 1/4 cup milk
- 1/4 cup all-purpose flour
- 2 tblsp vegetable oil
- 2 (10.75oz) cans condensed cream of chicken soup
- 1 packet dry au jus mix
- 3/4 cup water
Coleslaw--Memphis-Style

In a large bowl, stir together the mayonnaise, mustard, vinegar, sugar, salt, onion powder, and celery seeds
- 1 cup mayonnaise
- 2 tablespoons dijon mustard
- 2 tablespoons apple cider vinegar
- 3 tablespoons sugar
- 3/4 teaspoon kosher salt
- 1 teaspoon onion powder or 1 tablespoon finely grated onion
- 2 teaspoons celery seeds
- 1 16 ounce bag of coleslaw mix, plain cabbage or tri-color deli style
Easy Pasta Carbonara

Stack bacon and cut in half lengthwise, then cut crosswise in small pieces
- 1/2 of a 12oz pg uncooked turkey bacon
- 1 medium onion
- 4 garlic cloves or 2 tsp. minced garlic
- 1/4 tsp. crusshed red pepper flakes (optional)
- 1 pkg (14.5oz) uncooked bow-tie pasta (5 cups)
- 1 carton (32ox) unsalted chicken stock
- 1 can (12oz) fat free evaporated milk
- 1 oz fresh parmesan cheese
- 4 oz reduced fat cream cheese
- 1 1/2 cups frozen peas, thawed

Flourless Chocolate Zucchini Muffins

Preheat oven to 375F and prepare a muffin pan by spraying 9 cavities with cooking spray
- 1/2 cup (128 g) almond butter*
- 1 ripe medium-sized banana (100 g or 1/2 cup mashed)
- 1 large egg
- 1/4 cup (80 g) honey
- 1/4 cup (20 g) unsweetened cocoa powder
- 2 Tbsp (14 g) ground flaxseed
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1 cup (100 g) zucchini, shredded and squeezed of excess liquid
- 1/4 cup (60 g) chocolate chips, plus more for sprinkling on top

Ruby Tuesday Pasta Salad

•Cook the pasta according to package directions
- 1 pound rotini pasta
- 3/4 cup reduced-fat ranch dressing
- 3/4 cup reduced-fat mayonnaise
- 1/2 teaspoon seasoning salt
- 8 ounces diced ham
- 1 cup frozen green peas, defrosted
- 4 ounces (1 cup) shredded cheddar cheese, optional and not in the original recipe
- 1/4 cup chopped green bell pepper
