Oatmeal Scotchies

Preheat oven 375 degrees In mixing bowl, beat butter, sugar, brown sugar, eggs and vanilla
- 1 1/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 cup (2 sticks) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla
- 3 cups quick oats
- 1 - 11 oz. Bag butterscotch chips
- *optional
- 1/2 bag milk chocolate chips
Lumpia

Brown ground beef and drain well
- 1 1/2 lbs very lean ground beef
- 1 small yellow onion
- 1 bag shredded carrots
- 1/2 bag of celery hearts
- 6 or 7 cloves of garlic
- soy sauce
- pepper to taste
- 1 head of napa or savoy cabbage
- 2 packages of Lumpia or Spring Roll wrappers (25 in each package) keep in fridge to thaw and until ready to wrap as they will dry out
Crockpot Cornbread Dressing

Prepare cornbread according to package directions
- 2 (6-oz) packages Martha White Buttermilk Cornbread and Muffin mix
- 1 (14-oz) package Pepperidge Farm herb stuffing
- 2 (10.75-oz) cans cream of chicken soup
- 4 cups chicken broth
- 1 large onion, coarsely chopped
- 3 stalks celery, coarsely chopped
- 4 eggs lightly beaten
- 1 Tbsp dried sage
- ½ tsp pepper
- 2 Tbsp butter cut up
The Best Mac & Cheese

Mix mayo, sour cream, cheeses, salt and pepper
- 1 cup Duke’s Mayo
- 1 cup sour cream
- 2 cups mozzarella cheese
- 2 cups sharp cheddar cheese
- 1 3/4 cup elbow macaroni (cooked)
- Salt & Pepper to taste
- 1 pkg. Ritz Crackers
Mac & Cheese

- 1 cup Duke’s Mayo
- 1 cup sour cream
- 2 cups mozzarella cheese
- 2 cups sharp cheddar cheese
- 1 3/4 cup uncooked elbow macaroni (cook as directed)
- Salt & Pepper to taste
- 1 sleeve of Ritz crackers
Taco Pizza

1.Heat oven to 375 degrees
- 1 pound lean ground beef
- 1 envelope taco seasoning mix
- 1 (10 ounce) can refrigerated Pillsbury pizza dough
- 1 (16 ounce) can refried beans
- 2-3 cups shredded cheddar cheese (I used Colby and Monterey Jack cheese)
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Meatball Stuffed Buns

Thaw meatballs, cut them in half
- 1 can Pillsbury golden layers biscuits - each pulled into 2 layers
- 10 frozen fully cooked Italian style meatballs - thawed and cut in half
- 5 sticks string cheese - cut each into 4 pieces each
- grated Parmesan cheese
- dried basil
- dried oregano
- garlic powder
- cracked black pepper
- marinara sauce

- 1 8 oz package Cream cheese, softened
- 3 cups sugar

- 1 1/2 tsp vanilla extract
- 3 cups all-purpose flour
- 1/8 tsp salt
- Glaze-
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 1 TBS milk, to consistency
