Lemon Raspberry Streusel Muffins

Mix yogurt, eggs, sugar and oil and then add the dry ingredients and stir until well mixed
- 6 oz lemon yogurt (I used Greek yogurt in this batch and it worked well - use whatever flavor you want!)
- 2 eggs
- 1/2 cup sugar
- 3/4 cup oil (I always substitute at least 1/2 of this amount with applesauce, sometimes all of it. If you replace all the oil with applesauce, it will make them more dense and a little chewy but they are still delicious)
- 2 cups flour (I often replace half of this amount with whole wheat flour)
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup fresh or frozen raspberries (I used a 6 oz container of fresh raspberries
- Streusel Topping
- 1/3 cup sugar
- 1/4 cup flour
- 2 Tbsp. butter
Apple Cranberry and Almond Slaw

Apples, cranberries and almonds give this slaw the perfect amount of flavor
- DRESSING
- 3/4 cup fat free Greek Yogurt
- 1/4 cup mayonnaise
- 1/4 cup honey
- 2 tablespoon apple cider vinegar
- Salt and freshly ground black pepper
- COLESLAW
- 1 small cabbage, shredded, 6 to 7 cups packed
- 1 1/2 cups matchstick carrots
- 2 large gala apples, sliced into matchsticks, about 3 cups
- 1/2 cup sliced green onions
- 3/4 cup sliced almonds or 1 cup slivered almonds
- 3/4 cup dried cranberries
Blueberry Crunch

9 X 15 baking dish, spread pineapple in bottom of pan, sprinkle blueberries all over, sprinkle brown sugar all over
- 1 can crushed pineapple
- 3 cups of bluebberries fresh or frozen
- 1 cup brown sugar
- 1 box yellow Duncan Hines cake mix
- 2 sticks melted butter or margarine
- 2 cups chopped nuts
Peach Crunch Cake

Preheat oven to 350 degrees F
- 24.5 oz jar of sliced peaches in light syrup
- 1 package yellow cake mix
- 1 stick butter (1/2 cup), cut into 16 pieces
- 1 cup brown sugar
- 1/2 cup chopped walnuts
Chicken Tacos

1.In a crockpot, place chicken breasts (frozen) in the bottom 2
- 4 boneless skinless chicken breasts
- 1 cup of salsa (we used picante)
- 1 Tablespoons of Taco Seasoning
Snickerdoodle Blondies

Preheat oven to 350 degrees
- 2 2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups packed brown sugar
- 1 cup butter, at room temperature
- 2 eggs, at room temperature
- 1 Tablespoon vanilla
- 2 Tablespoons white sugar
- 2 teaspoons ground cinnamon
Apple Fritters

Combine flour, sugar, salt, baking powder, cinnamon
- Glaze:
- 1 cup all purpose flour
- 1/4 cup sugar
- 3/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/3 cup milk
- 1 egg
- 1 cup chopped apple
- 2 cups powdered sugar
- 1 1/2 tablespoons milk
Mississippi Roast

- 1 Chuck Roast
- 1 packet dressing mix
- 1 packet of Au Jus gravy mix
- 6 Tbsp butter

- 1 cup flour

- a dash of salt
- 3/4 cup milk
- 1 stick of melted butter

Buttermilk-Blueberry Breakfast Cake

Preheat oven to 350°. Cream butter with lemon zest and sugar until light and fluffy
- 1/2 cup unsalted butter, room temperature
- 2 tsp. lemon zest or more--zest from 1 large lemon
- 3/4 cup + 2 Tblsp sugar
- 1 egg, room temperature
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 2 cups fresh blueberries
- 1/2 cup buttermilk
