Lasagna Roll Ups

Preheat oven to 350 degrees
- 8 lasagna noodles, uncooked
- 14 oz freshly shredded, low-moisture part skim Mozzarella cheese, divided
- 3/4 cup Ricotta cheese
- 1 large egg white
- 1/3 cup freshly, finely shredded Parmesan cheese (about 1 1/4 oz)
- freshly ground black pepper
- 3 - 4 medium Roma tomatoes, thinly sliced (about 1/6 inch thick slices)
- 1/4 cup chopped fresh basil, plus more for garnish
- 1 cup marinara sauce, recipe follows

Salted Caramel Maple Pecan Pie Bars

1.Preheat oven to 35oF. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside
- Crust
- 1 cup all-purpose flour
- 1/3 cup brown sugar, packed (light or dark)
- 1/2 cup unsalted butter, very soft
- Filling
- 1 large egg
- 1/3 cup brown sugar, packed (light or dark)
- 1/3 cup maple or or pancake syrup (I used sugar-free lite pancake syrup)
- 1 tablespoon vanilla extract
- pinch salt, optional and to taste (consider omitting if nuts are well-salted)
- 1 cup pecans (I used raw, unsalted, whole pecans; use halves and pieces, salted and roasted, or your favorite type)
- 1/4 about 1/4 cup salted caramel sauce (homemade or storebought), for drizzling

- 2 cups self-rising flour
- 1 cup butter
- 1 cup strong black coffee
- 1/3 cup unsweetened cocoa powder

- 4 tablespoons buttermilk

- 2 Tblsp sugar
- 3 Tblsp water
- 1 egg white
- 3/4 tsp vanilla
- 1/3 cup all-purpose flour
- 1/3 cup wheat flouer
- 2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 cups old-fashioned oats
- 1/2 cup raisins
Pumpkin Muffins

- 1 cup pumpkin puree (not pie filling)
- 1/2 cup vegetable oil
- 1 cup plain Greek yogurt (I used non-fat)
- 1 teaspoon vanilla extract
- 1 large egg, lightly beaten
- 1/2 cup light brown sugar
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- Suggested additions: chopped walnuts or pecans, sliced almonds, chocolate chips (optional)
