Grilled Honey Balsamic Chicken

For the Chicken Seasoning Place olive oil, salt, black pepper, paprika, and onion powder in a zip lock bag
- Chicken Seasoning
- 2 lbs chicken breasts boneless and skinless
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 3/4 tsp onion powder
- Honey Balsamic Marinade
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- 2 tbsp ketchup
- 1 tsp garlic minced
Kiwi Colada

Add all ingredients to a blender and blend until smooth
- 1 1/2 oz light rum
- 1 1/2 oz Midori® melon liqueur
- 2 oz cream of coconut
- 2 kiwis
- 1/4 cup pineapple juice
- 1 oz whipping cream
- 1 1/5 cups crushed ice
Pecan Pie Muffins

Preheat oven to 350°. Grease muffin cups generously
- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 2 cups chopped pecans
- 2/3 cup butter, softened
- 2 eggs, beaten
Hawaiian BBQ Pork Tacos

Place pork roast in slow cooker
- 24-30 small wonton wrappers
- 1 pound pork roast
- 4 tsp liquid smoke
- 2 tsp salt (sea salt if you have it)
- 2 cups broccoli slaw
- 1/2 red onion, thinly sliced
- 1/4 cup cilantro, roughly chopped
- Sauce
- 1/4 cup ketchup
- 1/4 cup soy sauce
- 1/3 cup pineapple juice
- 1 tsp minced garlic
- 1 Tblsp brown sugar
- 1/8 tsp ginger
Maraschino Cherry Cupcakes

Directions 1. Preheat oven to 350 degrees and line pan with cupcakes liners
- Almond Cherry Cupcakes:
- 1 box white cake mix
- 3 eggs
- 1/3 C. oil
- 3/4 C. milk or buttermilk
- 1/2 C. sour cream or plain yogurt
- 2 tsp. almond extract
- 1 C. Maraschino cherries, roughly chopped
- Almond Buttercream:
- 1 C. butter, softened
- 1 1/2 tsp. almond extract
- 3-4 C. powdered sugar
- milk, if needed
- 20-24 Maraschino cherries with stems for decoration
WHITE CHILI

Cut raw chicken breast into 1/2 inch cubes
- 1 1/2 TO 2 LB. CHICKEN
- 4 CLOVES MINCED GARLIC
- 1 TSP. CRUSHED OREGANO
- 1 CAN WHITE SHOE PEG CORN
- 3 CANS GREAT NORTHERN BEANS
- SALT TO TASTE
- 2 TBSP. OLIVE OIL
- 2 TSP. GROUND CUMIN
- 1 CAN CHOPPED GREEN CHILES
- 2 CANS CHICKEN BROTH
Pumpkin Dump Cake

Preheat oven to 350 Spray a 9x13 baking pan lightly with cooking spray
- 1 15oz can Pumpkin Puree
- 1 10oz can evaporated milk
- 1 cup light brown sugar
- 3 eggs (slightly beaten)
- 3 tsp pumpkin pie spice
- 1 box yellow cake mix
- 1 sticks of butter, melted
- 1 cup coarsely crushed graham crackers or pecans
- 1/2 cup toffee bits
Spaghetti Salad

1.Cook spaghetti according to package directions, then rinse in cold water and drain
- 1 pound thin spaghetti, broke into 3-4" pieces
- 3 Roma tomatoes, diced
- 1 medium zucchini, diced
- 1 medium yellow zucchini squash, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 red onion, diced
- 1 cucumber, diced
- 2 (2.25 oz) cans sliced olives, drained
- 8 oz cheddar cheese, cut into small cubes
- Dressing
- 1 (16 oz) bottle Italian dressing (I love Wishbone Robusto Italian)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/4 teaspoon garlic powder
Skillet Lasagna

- 8 oz bowtie pasta
- 1/2 lb sausage
- 1/2 lb lean ground beef
- 1 tsp minced garlic
- 1 tsp dried basil
- 1 (24oz) jar spaghetti sauce
- 1 cup shredded mozzarella cheese
- 2/3 cup ricotta cheese

- 5 egg whites, separated

- 2 tsp. lemon zest
- 2 tsp. fresh squeezed lemon juice
