trout with lime and thyme

Mix lime juice, olive oil, thyme, garlic, black pepper, and cayenne pepper in a resealable plastic bag
- 1 lime juiced
- 1 T olive oil
- 1 T fresh thyme
- 2 garlic cloves minced
- pepper
- cayenne pepper
- 2 trout fillets
Chicken Parmesan

Preheat an oven to 450 degrees F (230 degrees C)
- 4 skinless, boneless chicken breast halves
- salt and freshly ground black pepper to taste
- 2 eggs
- 4 cups panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons all-purpose flour, or more if needed
- 1 cup olive oil for frying
- 1/2 cup prepared tomato sauce
- 1/4 cup fresh mozzarella, cut into small cubes
- 1/4 cup chopped fresh basil
- 1/2 cup grated provolone cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil

While mozzarella is cold, slice it into 1/4-inch slices
- 1 pound fresh, best-quality mozzarella (preferably buffalo milk)
- 4 medium heirloom tomatoes
- 1 bunch fresh basil, leaves only, some reserved for garnish
- Flaky sea salt, such as Maldon
- Coarsely ground black pepper
- High-quality extra-virgin olive oil
Mushroom Artichoke Stuffing

- 1 T fresh thyme chopped
- can artichoke hearts, chopped
- 2 t minced garlic
- salt and pepper
Italian Mushroom Casserole

- 3 pounds mushrooms
- 4 T butter
- 1/2 t basil
- 1/2 t thyme
- 1/2 t oregano
- 2 cloves crushed garlic
- 1/2 t paprika
- 1/2 t rosemary
- salt and pepper to taste
- 6 oz grated parmesan cheese
- 2 qt good pasta sauce

Spinach orzo

1.Bring water to a boil in a medium saucepan
- 5 cups water
- 2 cups uncooked orzo
- 8 ounces coarsely chopped fresh spinach
- 4 ounces of feta cheese
- 1 small can mandarin oranges
- bunch of slivered almonds, toasted

- 1 teaspoon grated lemon rind
- 1 tablespoon fresh lemon juice
