1) In a medium saute pan over medium-low heat, melt butter
- 5 tbsp butter
- 1/4 cup all-purpose flour
- Salt to taste
- 1 cup fat free half and half cream
- 4 oz cream cheese
- 3 cloves garlic, minced
- 1 small onion, minced
- 1/2 tsp black pepper
- 1/4 tsp ground nutmeg
- 20 oz frozen spinach (thawed)
- 1/4 cup water
- 1/4 cup Parmesan cheese (grated)
Sea Bass with Tomatoes, Olives and Capers

In a large non-stick skillet, heat 2 tsps
- 4 tsps. olive oil
- Four 5-ounce skinless sea bass fillets (or other white fish)
- 1 small onion, diced (about 1 cup)
- 1/2 cup dry white wine
- 1 cup canned no-salt-added diced tomatoes, with their juices
- 1/2 cup pitted and chopped calamata olives
- 2 Tbs. capers, drained
- 1/4 tsp. red pepper flakes (optional)
- 2 ounces baby spinach leaves (about 2 lightly packed cups)
- Salt and freshly ground black pepper to taste
Chicken Cacciatore With Mushrooms, Tomatoes and Wine

Place the dried mushrooms in a bowl or heat-proof glass measuring cup and pour on 2 cups boiling water
- 1/2 ounce dried mushrooms, like porcini (1/2 cup)
- 2 tablespoons olive oil
- Salt and freshly ground pepper
- 6 to 8 skinless chicken legs and/or thighs (thighs can be boneless)
- 1 small onion, minced
- 1 small carrot, minced
- 3 ribs celery, minced
- 2 large garlic cloves, minced
