Stuffed Peppers

1.snip tops of peppers off and clean
- insides of peppers:
- green peppers (however many you are using that evening)
- 1 1/2 lb ground beef
- jar of spaghetti sauce
- 1 /2 cup cooked rice
- 1 chopped onion
- 1/2 lb sliced mushrooms
- salt, pepper, paprika, garlic salt
- bread crumbs
- parm cheese
- pat of butter
Debbie Rogers White Lightning Texas Chili

1. wash and soak beans overnight in water that is 2 inches above beans
- bag of navy beans
- 4 14 oz cans chicken broth
- large onion chopped
- 2 garlic cloves crushed
- 1 T pepper
- 1 T oregano
- 1 T cumin
- 1/2 t cloves
- 5 cups cooked chicken cut up
- 2 cans green chilies
- 1 cup water
- 1 jalapeno pepper
- toppings: salsa, jack cheese, sour cream
Chow Mein

Whisk 3 tablespoons soy sauce into cornstarch in a small bowl
- 3 tablespoons plus 2 teaspoons soy sauce
- 5 teaspoons cornstarch
- 3 tablespoons Shaoxing rice wine
- 1 tablespoon sugar
- 1 cup low-sodium chicken broth
- 8 ounces boneless skinless chicken thighs, cut into 1/2-inch pieces

- 6 tablespoons (3/4 stick) unsalted butter
- 3 1/4 cups (20 ounces) semisweet chocolate chips

- 1/2 teaspoon pure vanilla extract

- Crust:
- 1/3 cup butter, softened
- 1/4 cup packed dark brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground mace or nutmeg
- 4.5 ounces all-purpose flour (about 1 cup)
- Cooking spray
- Filling:
- 1 cup 1% low-fat cottage cheese
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon grated lemon rind
- 3 1/2 tablespoons fresh lemon juice
- 1/4 teaspoon baking powder
- 1 large egg
- 1 large egg white

Tomato and Watermelon Salad with Feta and Oregano

Combine tomatoes and watermelon in shallow bowl
- 2 large ripe tomatoes
- 1/4 of a small watermelon,cut into pieces (3 cups)
- 2 T olive oil
- 2 t red wine vinegar
- 1/2 t kosher salt
- 1/4 t black pepper
- 4 oz feta cheese
- 8 calamata olives, sliced
- 3 T sliced red onion
- 1/2 t mexican oregano (optional)
crispy baked shrimp scampi

Heat oven to 220°C | 425º F
- 1 kg (2 pounds) shrimp, peeled, deveined and tails on or off
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons white wine (optional -- sub with extra lemon juice or chicken stock
- 1 brown shallot, minced
- 1/3 cup melted butter, divided
- Salt and pepper, to taste
- 1/3 cup Panko breadcrumbs
- 4 cloves garlic, minced
- 2 tablespoons grated parmesan cheese
- 1/2 teaspoon crushed red pepper flakes or more, to taste
- 1/4 cup fresh chopped parsley leaves
Eggplant Parmesan

1. make sauce ahead of time 2
- when onions are clear and soft add:
- sauce: *** 1 eggplants,1 lb moz cheese
- 3 T olive oil
- 1 cup chopped onion
- 1 T minced garlic
- 1 cup chopped green pepper
- 2 t basil
- 1 t oregano
- 2 bay leaves
- 2 t salt
- 1 16 oz can tomato pureee
- 1 6 oz can tomato paste
- 2 T red wine
- 1 cup chopped tomatoes
- 1/4 t black pepper
- cover and simmer 45 minutes, stir occasionally then add:
- 1/2 cup fresh chopped parsley, salt and pepper
- sauteed chopped mushrooms (1/2 lb)
- 1/2 cup grated parmesan cheese

- 7 oz semi sweet chocolate
- 1/4 lb unsalted butter
- 7 eggs separated
- 1 cup sugar
- 1 t vanilla
- 1/8 cream of tartar
- chocolate shavings
- 1/2 pint whip cream (1 cup)
- 1/3 cup powdered sugar
- 1 t vanilla
