Easy Beef Stroganoff

Sautéed pieces of beef served in a delicious creamy sauce with mushrooms over egg noodles
- 1 (12-ounce) package egg noodles
- 1/2 stick butter
- 6 ounces fresh mushrooms, sliced (about 2.5 cups)
- 1 medium onion, chopped (1 cup)
- 1 1/4 teaspoons salt
- 2 pounds flat iron steak, cut across grain into 1/4-inch slices
- 1/4 cup flour
- 2 cups low sodium beef broth
- 1 cup sour cream
- 1/2 teaspoon pepper
Spinach Dip

Mix all ingredients and refrigerate until ready to serve
- 1 (8 oz) can water chesnuts, chopped
- 1/2 med onion chopped
- 1 (11 oz) box frozen, chopped spinach moisture squeezed out

- 1-1/2 pounds beef top round steak
- 2 tablespoons canola oil
- 1 cup chopped onion
- 1/4 cup reduced-sodium soy sauce
- 1 garlic clove, minced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 large green pepper, cut into strips
- 1 tablespoon cornstarch
- 1/2 cup cold water
- Hot cooked noodles or rice
Scallops In Sage Cream

Sprinkle scallops with salt and pepper
- 1-1/2 pounds sea scallops
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons olive oil, divided
- 1/2 cup chopped shallots
- 3/4 cup heavy whipping cream
- 6 fresh sage leaves, thinly sliced
- Hot cooked pasta, optional
- In place of 3 to 4 shallots, use 1 medium onion plus a pinch of garlic powder or (if you like the taste of garlic) 1 minced garlic clove.

In a large bowl, combine the paprika, oregano, cumin and garlic powder with 1 1/2 tsp salt and 1 1/2 tsp pepper
