Maple Raisin Pudding

Ingredients
- 1-1/2 cups sifted pastry flour
- 3 t baking powder
- 1/2 t salt
- 1/2 cup raisins
- 2 eggs
- 1/4 cup sugar
- 1-1/2 cups maple syrup
- 1 cup half and half

Method:
Preheat oven to 375˚F. Sift flour, baking powder and salt. Add raisins. Bring maple syrup to a boil. Pour into a a 1-1/2 quart baking dish.
Cream butter. Add sugar. Add eggs, one at a time, beating well after each addition. Stir in flour mixture and milk, alternately, until batter is smooth.
Pour onto hot syrup.
Bake 30 to 35 minutes, until golden brown and light.
Serve hot.
