Quebec Apple Glazed Carrots

- 3/4 lb carrots, sliced crosswise into 1/3-inch pieces

Method: Combine the beef and chicken broths and bring to a boil
- 8 cups beef broth
- 8 cups chicken broth
- 2 T fresh basil, slices
- 1 package prepared tortellini

Rissoto With Porcini Mushrooms

Steep the porcini in a cup of boiling water for fifteen minutes
- A one ounce packet dried porcini (25 g, about a packed half cup)
- 1/2 of a small onion, finely sliced
- 1/4 cup plus 2 tablespoons butter, or: 3 tablespoons olive oil + 1/4 cup butter
- 1 1/2 cups rice
- 1/3 cup dry white wine, warmed in a pan on the stove
- 1 cup grated Parmigiano
- 1/2 cup heavy cream (optional)
- The water the mushrooms were soaked in, strained, and a quart of simmering water, beef broth, or watery bullion
- A bunch of parsley, minced
- Salt and pepper to taste
Roasted Cherry Tomato Claffoutis

Arrange cherry tomatoes in a single layer in a shallow 6 cup baking dish
- or:
- 2 cups cherry tomatoes (1 lb)
- 2 tbsp olive oil
- 1 tbsp chopped fresh thyme (or 1 tsp dried)
- 2 cloves garlic, crushed
- 2 tsp granulated sugar
- salt & pepper
- 1 cup light cream
- 3 eggs
- 2 tbsp all purpose flour
- 1/2 lb (about 2 c) mozzarella cheese, shredded
- Pepper and salt to taste
- Use this recipe for the batter - not so eggy, more firm
- 1/2 cup butter, softened
- 2/3 cup sugar
- 4 eggs
- 1 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt

1. In a large saucepan, combine the carrots, rutabaga and water
- 4 medium carrots, cut into 3 inch julienne strips
- 2 cups rutabaga, peeled and cut into 3 inch julienne strips
- 1/2 cup water
- 2 tablespoons butter or stick margarine
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon dill weed

- 1 lb or more of lean Beef cut into app. 3/4 inch cubes
- 1 lg green bell pepper diced into app. 3/4 inch squares
- 1 lg red bell pepper diced into app. 3/4 inch squares
- 1 medium onion diced into app 3/4 inch squares
- 2 cups mushrooms, (quartered into app 3/4 inch chunks)
- 1 20 .oz can of sliced or chunked pineapple in unsweetened juice,
- (if sliced, quarter the rings)
- 1/3 cup wheat free soy sauce
- 1/2 cup water
- 2 tbs lime juice
- 1 tsp lemon juice

- 1/2 C. all-purpose flour
- 1 C. granulated sugar
- 1/2 C. chilled butter -- (1 stick) plus
- 2 Tbs. chilled butter -- (divided)
- 1 egg
- 4 Tbs. milk -- (4-5)
- 2 tsp. vanilla -- (divided)
- pinch salt
- 12 sweet cooking apples -- see notes
- 1/4 C. firmly packed brown sugar
- 1/2 tsp. ground cinnamon

Preheat oven to 350˚F
- 4 chicken breasts, skinned and boned
- salt and pepper to taste
- 2 T flour
- 2 T extra-virgin olive oil
- 2 T butter
- 2 garlic cloves, finely chopped
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 2/3 cup 35% cream
- 12 capers
- 1 pkg. sliced mushrooms
- 4 x2 oz Mozzarella slices
- 4 anchovy fillets
