Candied Carrots

Preheat the oven to 350 degrees F
- 1 bunch young carrots, with tops
- 1/4 cup extra-virgin olive oil
- Sea salt and freshly ground black pepper
- 4 tablespoons (1/2 stick) unsalted butter
- 1 orange, zested and halved
- 1 tablespoon brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
Sticky Toffee Pudding - A Royal Family Favourite

Preheat oven to 350 degrees
- Cake
- 6 oz dried, pitted Medjool dates (about 12)
- 1 cup hot water
- 1/2 tsp baking soda
- 1 1/4 cups (5.8 oz) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 4 Tbsp unsalted butter, softened
- 3/4 cup (5.7 oz) packed dark brown sugar
- 1 large egg
- 1 large egg yolk
- 1 1/2 tsp vanilla extract
- Toffee Sauce
- 1/3 cup unsalted butter
- 2/3 cup heavy cream
- 2/3 cup (5.2 oz) packed light-brown sugar
- 1/2 tsp vanilla extract
- 1/8 tsp salt
Flan De Maiz Mezclado (Blender Corn Custard)

- For the Mojo:
- 12 cloves garlic (or 4 tablespoons minced garlic)
- 2 habaneros or other spicy chiles, cored, seeded, and minced (wear rubber gloves)
- 1 teaspoon kosher salt
- 4 teaspoons whole cumin seeds, toasted
- 1 cup olive oil
- 2/3 cup sour orange juice (or 1/3 cup fresh lime juice plus 1/3 cup fresh orange juice)
- 1 1/2 tablespoons sherry vinegar
- salt and freshly ground black pepper to taste
- For the Steak:
- 1 1/2 pounds flank steak
- 1 or 2 large Bermuda onions, thickly sliced and brushed with olive oil (optional)

Sauce for Meatloaf

Mix all together and simmer for about 2 hours or 45 minutes in a pressure cooker
- Tomatoes
- either 6 fresh, or
- 2 and one half cups of canned ones
- One Onion, sliced in thin rings
- One teaspoon Cinnamon
- One half cup Brown Sugar
- One teaspoon Vineager
- One half teaspoon Salt
Bloody Mary Bread

Place all ingredients into pan, select white bread and push start Serve with a stalk of celery
- 1 package Yeast
- 3 cups Bread flour
- 1 teaspoon Salt
- 1 tablespoon Sugar
- 1 tablespoon Soft butter
- 6 ounces Can of spicy V-8 juice -- at room temperature
- 1 tablespoon Vodka
- 1 tablespoon Water
- 1 Egg
Tomato, Feta, and Preserved Lemon Salad

This salad is delicious - bursting with bold, briny flavors-but it is definitely salty
- 1 to 2 preserved lemons (see separate recipe)
- 1 serrano chile
- 1/2 pound feta cheese (preferably more creamy than crumbly), cut into 1/2-inch cubes (1-3/4 cups)
- 1-1/2 cups grape or small cherry tomatoes, halved

Heat a large skillet over medium high heat
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 3 tablespoons butter, divided
- 4 cloves garlic, finely chopped
- 1 medium onion, finely chopped
- 2 ribs celery with green leafy tops, finely chopped
- 1 small green bell pepper, seeded and finely chopped
- 4 to 5 sprigs fresh thyme, intact
- 1 bay leaf, fresh or dried
- Salt and black pepper
- 1 tablespoon Worcestershire sauce, eyeball it
- 1 to 2 tablespoons plus 2 teaspoons hot sauce (recommended: Frank's Red Hot), divided
- 2 tablespoons all-purpose flour
- 1/2 cup beer, 1/3 of a bottle
- 3 cups chicken stock, divided
- 2 (14-ounce) cans diced tomatoes
- 1 can tomato paste
