Coconut Beer Battered Shrimp/Fish

Ingredients

  • Seasoning Mix
  • 1 T cayenne pepper
  • 1-1/2 t paprika
  • 1-1/2 t black pepper
  • 1-1/4 t garlic powder
  • 2 t salt
  • 1/2 t onion powder
  • 1/2 t thyme
  • 1/2 t oregano
  • Flour Mixture
  • 1/2 cup flour
  • 1-1/2 t seasoning Mix
  • Batter
  • 2 eggs
  • 2 t Seasoning Mix
  • 1-1/2 cups flour
  • 1 cup beer
  • 1 T baking powder
  • 2 lbs. medium or large shrimp or fish
  • 3 cups grated coconut
  • Sweet and Sour Sauce
  • 1 18 oz. jar orange marmalade
  • 3/4 T brown sugar
  • 2 to 3 T prepared horseradish

Combine all seasoning mix ingredients and mix well; set aside.

In a medium bowl, combine 1/2 cup flour and 1-1/2 t seasoning Mix; set aside.

In another bowl, combine all batter ingredients. Mix well; set aside.

Peel and devein shrimp (or make sure fish is thinly filleted). Sprinkle both sides with remaining seasoning Mix.

Dredge each shrimp or fish fillet in flour mixture. The, dip into batter mixture. Allow excess batter to drip off. Coat generously with coconut. Set aside.

In deep frying, heat oil to 350˚F. Drop small batches of shrimp or fish into oil and fry until golden brown.

Drain on paper towels. Serve warm with sweet and sour sauce.

Sauce: Combine all ingredients in a small bowl.
