Preserved Lemons - A Perky Condiment Worth the Wait

Make the preserved lemons in a wide-mouthed glass jar that has a glass lid
- 6 small thin-skinned lemons 1/2 cup kosher salt
- 1 2-inch piece of cinnamon stick
- 2 cloves
- 1 bay leaf
- 1 wide-mouthed quart-size Mason jar, sterilized
Reuben Bread

All ingredients must be at room temperature except water at 110 degree F
- 3 tablespoons Thousand island dressing
- 1 cup Plus 2 tbs warm water
- 1 teaspoon Salt
- 2 1/4 cups Bread flour
- 1 cup Rye flour
- 2 tablespoons Gluten
- 1/2 teaspoon Dry mustard
- 1/8 teaspoon Baking soda
- 1 teaspoon Caraway seeds
- 3 ounces Swiss cheese -- shredded
- 1/4 cup Sauerkraut -- rinsed & drained
- 2 1/2 teaspoons Active yeast
- 2 1/2 ounces Deli sliced lean corned Beef
Basic Pizza Dough

1. Add all ingredients to bread pan in the order given
- # 1 1/2 cups warm water
- # 2 tablespoons olive oil
- # 4 cups flour (all purpose or bread)
- # 1 1/2 teaspoons salt
- # 1/3 cup parmesan cheese
- # 1 tablespoon italian seasoning
- # 2 1/2 teaspoons active dry yeast
Jim's Paella

Fry the chopped bacon in a large paella pan (paellara) until crisp
- 5 slices of bacon, chopped
- 4 or 5 lbs. chicken breast, chopped into small cubes
- 2 Spanish chorizo sausages or andouille sausages, cut cross-wise
- 3 or 4 strands of saffron, toasted on a hot pan for a few seconds
- 1 cup white wine - heated
- 2 stalks celery, finely chopped
- 1 medium onion, finely chopped
- 1 green pepper, finely chopped
- 1 red pepper, finely chopped
- 1 (15 oz) can whole tomatoes, hand crushed
- 4 or 5 lbs. large shrimp
- clams
- mussels
- 1/2 cup dry white wine
- 2 lbs bay scallops
- king crab - optional
- 1/4 cup olive oil
- 4 cloves of garlic, minced
- 2 cups rice (Valencia, Calasparra, or Bomba, if possible) - otherwise, use a good long-grained rice
- 2 cups chicken stock (homemade if possible)
- 2 cups seafood stock/clam juice (you can substitute the liquor from the clams and mussels)
- 2 lbs. firm fish, cut into cubes (halibut, salmon, etc.)
- parsley
- 1 Tbs capers
- 1 tsp oregano
- 1/2 tsp ground coriander
- 1 tsp thyme leaves
- salt and pepper to taste
- lemon wedges
- chopped flat leafed parsley - about a 1/4 cup
Chicken Francesca

Method: Heat a heavy frying pan on medium-low heat
- 4 skinless, boneless chicken breasts
- 1 cup flour
- 2 to 3 eggs, well beaten
- 2 lemons
- 2 cups chicken broth
- 2 T butter
- salt and pepper
Garlic Toast

Directions: 1 Turn on broiler
- 4 slices whole grain bread
- 1 tablespoon olive oil
- 1 -2 tablespoon light margarine
- 1/2 teaspoon italian seasoning
- 1 teaspoon fresh parmesan cheese, grated
- 1 garlic clove, crushed
- paprika
- flaked sea salt
Dr. Pepper Pulled Pork Sandwiches

Directions Add all ingredients except barbecue sauce to slow cooker
- 3-4 lb. pork
- 3 C. Dr Pepper
- 1/2 C. vinegar
- 1 tsp. chili powder
- 1 tsp. red pepper flake
- 2 Tbs. brown sugar
- 3 Tbs. Worcestershire sauce
- 1 onion, diced
- 2 cloves garlic, chopped
- 2 C. barbecue sauce

- 1 1/4 cups self raising flour
- Salt
- 1/4 cup milk, plus extra is needed (I did about another 1/4 cup.
