Sauerkraut

1. Set pressure cooker over medium heat
- 4 lbs sauerkraut
- 2 tablespoons unsalted butter
- 2 large onions
- 2 cups dry white wine
- 3 slices bacon; cut into 1" pieces
- 4 cloves garlic; crushed
- 1 cup chicken broth
- 1 tablespoon fresh lemon juice
- 1-1/4 teaspoon salt
- 1/2 teas poon pepper
- 1 teaspoon dried thyme
- 2 bay leaves
- 8 juniper berries
- 1 tb caraway seeds
- 1 russet potato, peeled and grated
- 1 tablespoon brown sugar
- 2 tablespoons vermouth
- 1/4 teaspoon celery seeds
- bratwurst
Raisin Sauce for Ham

Directions In a saucepan, combine brown sugar, cornstarch and mustard
- 1/2 cup packed brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground mustard
- 1-1/2 cups water
- 1/2 cup raisins
- 2 tablespoons white vinegar
- 2 tablespoons lemon juice
- 1/4 teaspoon grated lemon peel
- 2 tablespoons butter
Pea Salad

Directions: Combine all ingredients in a large serving bowl and stir gently until well mixed
- 12 oz pkg Frozen Peas, thawed
- 7 oz can Whole Kernel Corn, drained
- 1 cup Cubed Cracker Barrel Sharp Cheddar Cheese
- 1/2 cup Chopped Cooked Bacon
- 1/2 cup Roasted Peanuts or Cashews
- 1/2 cup Diced Celery
- 1/4 cup Minced Onion
- 1/3 cup Sour Cream
- Salt & Freshly Ground Black Pepper, to taste
Bouillabaisse

Heat oil in pressure cooker pot and sauté onion
- 3 tablespons olive oil
- 2 onions, chopped
- 2 cloves garlic
- 2 tablespoons parsley, chopped
- 1 can tomatoes, drained and chopped
- 1 bay leaf
- 1 teaspoon thyme
- 1/4 teaspoon saffron, crushed (optional)
- 4 cups water
- 1 pound hearty fish fillets, cut in chunks
- 1 pound lobster tail, cut in chunks
- 12 oz. Scallops
- 1/4 lb. Shrimp, shelled
- 6 clams in shells
- Salt and pepper
4 Layer Dessert

Layer in order
- nd LAYER:
- 2 c. flour
- 2 sticks butter, 1/2 lb.
- 1 c. chopped nuts, English walnuts
- Mix together and pat into an oblong pan. Bake at 350 degrees for 25 minutes. Cool.
- 8 oz. cream cheese
- 1 c. powdered sugar
- 1 c. Cool Whip
- Mix together and put on cooled crust.
- rd LAYER:
- 2 pkg. instant lemon pudding
- 3 c. milk
- Whip together and put on 2nd layer.
- th LAYER:
- 1 c. Cool Whip
Broccoli Bites

In a large mixing bowl, place all ingredients except bread crumbs
- 3 eggs
- 1 cup shredded Colby cheese
- 1 cup shredded Cheddar cheese
- 1 (16-ounce) boxes frozen chopped broccoli, thawed
- 6 slices bacon, cooked and crumbled
- 1 ounce all-purpose flour
- salt and pepper to taste
- Italian breadcrumbs, as needed
- oil for frying
- prepared honey mustard sauce for dipping
Minted Pea Purée

A pea minted puree on your plate is like a breath of Spring, no matter what time of year you make it
- 1 pint/600ml water
- 10 1/4 oz/ 300g fresh or frozen garden peas**
- Pinch salt
- 1/4 cup fresh mint leaves plus extra for garnish
- Salt and pepper for seasoning
- 1 tbsp butter, optional
- Prep Time: 5 minutes
- Cook Time: 5 minutes
- Total Time: 10 minutes
- Yield: Serves 4
Chocolate Ganache

Place chocolate in a medium microwave-safe bowl and heat on high power for 1 minute to soften chocolate; set aside
- 9 ounces semi-sweet chocolate (about 1 1/2 cups semi-sweet chocolate chips)
- 3/4 cup cream or half-and-half
- 1 teaspoon vanilla extract (or optionally use 1 to 2 tablespoons rum, bourbon, coffee-, orange-, raspberry-, chocolate-flavored liqueur)
Lemon Vodka Sauce

Method: In a medium saucepan, heat butter until melted
- 4 oz. butter
- 5 oz. all purpose flour
- 1 cup celery, chopped
- 1 cut onion, chopped
- 1/4 t white pepper
- 1/4 t cayenne pepper
- 1 t garlic, finely chopped
- 1/2 t lemon juice
- 1 lemon wedge
- 2-1/2 cups seafood broth or chicken broth
- 2 cups heavy cream
- 1/2 cup vodka
White Frosting

- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 to 3 Tbsp. milk
