Make crespelle: Blend together eggs, water, flour, and salt in a blender until smooth
- For crespelle:
- 2 large eggs
- 2/3 cup water

- 2 teaspoons finely grated fresh lemon zest
- 1/4 teaspoon black pepper

- 1 shallot, finely chopped

Creole Baked Rice
