Zesty Pesto Bread

(Large loaf in parentheses)
- 3/4 cup Lukewarm water (1C+2T)
- 2 cups Bread flour (3C)
- 1/4 cup Prepared Pesto (1/3C)
- 1/4 cup Sun-dried tomatoes -- softened
- chopped (1/3C)
- 1 tablespoon Sugar (2T)
- 1 teaspoon Salt (1-1/2ts)
- 3/4 teaspoon Rapid Rise Yeast (1-1/4ts)
- (Large loaf in parentheses).
- Prepare regular loaf if your bread machine recipes typically call for 2 cups flour.
- Prepare large loaf recipe if they typically call for 3 cups flour.
- Measure all ingredients and place in bread machine pan in the
- order that the b/m manufacturer suggests.
- Select regular bake
Light Pumpernickle

Bake on regular bake cycle
- 1-1/3 cup Water
- 2-2/3 tablespoons Vegetable oil
- 2-2/3 tablespoons Molasses
- 4 teaspoons Gluten (optional)
- 4 teaspoons Sugar
- 1 teaspoon Salt
- 2-1/2 teaspoons Caraway seeds
- 2-2/3 tablespoons Unsweetened cocoa
- 2 cups Rye flour
- 2 cups Bread flour
- 2 teaspoon Yeast

Poached Salmon

1) In a large skillet, combine wine, water, lemon slices, dill sprigs, bay leaf and peppercorns
- 1 1/2 cups dry white wine
- 1 1/2 cups water
- 1 lemon, sliced
- 2 sprigs fresh dill
- 1 dried bay leaf
- 1/2 tbsp whole black peppercorns
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 6 (6oz) salmon fillets, skin removed
- Lemon Dill Sauce
- 1 cup mayonnaise
- 1/4 cup buttermilk
- 1 tbsp chopped fresh dill
- 1 tbsp fresh lemon juice
- 1 tsp grainy mustard
- 1/2 tsp lemon zest
Pork Chop Casserole

Directions: 1 Het oven to 325 degrees
- 8 boneless pork chops (about 3/4-inch thick)
- seasoning salt
- black pepper
- 2 tablespoons oil
- 2 tablespoons butter
- 6 medium russet potatoes (sliced about 3/4-inch thick)
- 2 medium onions, halved and thinly sliced (can use 1 onion)
- 1 -2 tablespoon fresh minced garlic
- 2 small celery ribs, finely diced
- 1 (10 ounce) can mushroom pieces, well drained
- 2 (10 ounce) cans cream of mushroom soup, undiluited 1
- (8 ounce) container sour cream
- 1/2 cup milk
- 1/4 cup grated parmesan cheese
- 2 cups shredded old cheddar cheese, divided
Carrot Soufflée

- 1 stick butter
- 1/2 C. brown sugar
- 1 Tbs. cinnamon
- 2 Tbs. flour

- 1 prepared cheesecake
- 20 spring roll wrappers
- 5 tablespoons vegetable oil (as needed)
- cinnamon sugar (to taste)

- 1 egg
- 1 cup milk
Scallop and Walleye Burger

Grind sea scallops and walleye in food processor
- 1 . 1-1/2 lb of fresh walleye, skinned, de-boned and cleaned
- 2 . 1 lb of large sea scallops, rinsed and cleaned
- 3 . 1 cup of mashed potatoes, pre-cooked pre-packaged in store
- 4 . 2 large eggs beaten
- 5 . 3 tsp of sea salt, fine ground in coffee grinder
- 6 . 2 tsp of white pepper, fine ground in coffee grinder
- 7 . 1 bunch green onion, minced
- 8 . 1 1/2 tsp of ground cardamom
- 9 . 3 tsp of orange peel, grated
- 10 . 2 tbs of fresh cilantro, minced
- 11 . 3 tsp of fresh parsley, minced
- 12 . 3 cups of Ritz crackers, fine ground
Upside Down Pizza

Directions Preheat oven to 400 degrees
- 8 slices bacon
- 1 lb. ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 1/2 C. pizza sauce
- 3 Roma (plum) tomatoes, chopped
- 4 oz. shredded cheddar cheese
- 2 eggs
- 1 C. milk
- 1 Tbs. vegetable oil
- 1 C. all-purpose flour
