- 8 chicken legs with thighs (parts or whatever part of the chicken you like)
- 2 cans cream of chicken soup, or any cream kind, undiluted

Jim's Cold Weather Soup

Method: Melt butter in large heavy-bottomed stock pot
- 2 T butter
- 1 red pepper, cubed
- 1 green pepper, cubed
- 1 large onion, chopped
- 1 cup chopped celery
- 2 cups cubed potatoes
- 1 small bag frozen peas
- 4 boneless, skinless chicken breasts, cubed
- 8 cups Imperial Broth (pg.one, this section)
- 4 cups whipping cream
- 1 cup Uncle Ben’s rice (uncooked) or
- 1 pkg. commercially flavored rice
- 1 cup cooked wild rice
- 8 oz. cream cheese, cubed and at room temperature
- 1 T caraway seeds
- 1 t chopped fresh dill
- salt and pepper to taste
Spicy Rum Garlic Shrimp

Method In a skillet, heat oil over medium high heat
- 1 lb. of peeled and deveined large shrimp
- 3 cloves of garlic, minced
- 1/2 t fresh cilantro, chopped
- 1 small hot pepper, seeded and chopped
- 2 T corn oil
- 2 oz dark rum
- pinch of salt
Pressure Cooker Sweet Rice Pudding

Directions: 1. Set cooker on BROWN mode
- 2 tbsp. butter
- 1 1/2 cups long-grain rice
- 2 cups milk
- 2 cups water
- 1 cup brown sugar
- 1/2 cup golden raisins
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 tbsp. grated orange zest
- 1/2 tsp. vanilla extract
- 1/2 cup sweetened condensed milk
- 1 cup heavy cream

- 1 lb medium zucchini
- 1 large baking potato , peeled
- 1 small onion , peeled

Mexican Chicken Legs

Directions: 1 Put chicken legs in a baking dish
- 1 -2 lb boneless skinless chicken legs or 1 -2 lb boneless skinless chicken breast
- 1 cup ketchup
- 1 cup water
- 1/4 cup Worcestershire sauce
- 1 dash cayenne pepper
- 1 tablespoon brown sugar
- 1 teaspoon salt (optional)
- 1 teaspoon celery salt (optional) or 1 teaspoon celery seed
- 1 teaspoon chili powder
- 2 tablespoons lemon juice
- red chili pepper flakes (optional)
Italian Sausage Soup with Tortellini

- 1 pound sweet Italian sausage, casings removed
- 1 cup chopped onion
- 2 cloves garlic, minced
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup red wine
- 4 large tomatoes - peeled, seeded and chopped
- 1 cup thinly sliced carrots
- 1/2 tablespoon packed fresh basil leaves
- 1/2 teaspoon dried oregano
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups sliced zucchini
- 8 ounces fresh tortellini pasta
- 3 tablespoons chopped fresh parsley
