Hot Crackers

Mix oil, salad dressing mix, and pepper flakes in a large bowl with a tight fitting lid
- 1 1/2 cups canola oil
- 1 package Hidden Valley dry salad dressing
- 2 tablespoons red pepper flakes [or to taste]
- 1 pound premium saltine crackers
Jim's Halibut Olympia

1. Preheat oven to 375 degrees
- (Optional) Marinate the halibut in white wine overnight. Drain and dry well.
- 1/4 cup butter
- 1 medium onion, chopped
- 1/4 cup finely chopped red pepper
- 1/4 cup finely chopped green pepper (or jalapeno for added zest)
- Johnny’s Seafood Seasoning (or other seasoning of choice)
- 2 - 3 lbs fresh halibut fillets (or thawed frozen)- remove brown parts
- 1 bunch green onions, finely chopped
- 7-8 pieces cooked crumbled bacon
- 1/2 teaspoon garlic powder
- juice of half a lemon (or to taste)
- 2 cups sour cream
- 2 cups mayonnaise
- 1 Tablespoon Dijon Mustard
- 1 tablespoon Worcestershire Sauce
- 3/4 cup parmesan cheese
- 1 teaspoon dried dill
- white pepper and salt to taste
Pressure Cooker Fennel and Scallop Bisque

Trim the long stalks from the fennel down to the bulb
- 2 small fennel bulbs, about 1 1/4 pounds total
- 1 med. onion, about 6 ounces
- 1 med. red potato
- 1 stalk celery
- 1 large clove garlic
- 3 Tbsp unsalted butter
- 1/4 pounds sea scallops
- 1 cup fish stock or clam juice
- 1 cup of water
- 1/4 cup dry white wine or sherry, optional
- Salt and Pepper to taste
- Nutmeg freshly ground
- Hot Pepper sauce (optional)
Australian Chocolate Mug Cake

Add dry intredients to the mug and mix well
- 4 tablespoons self raising flour
- 4 tablespoons sugar
- 2 tablespoons cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips (optional)
- a small splash of vanilla extract
- 1 large coffee mug that is microwave safe
Emeril's Breakfast Casserole

Directions In a small bowl, beat the eggs until they loosen up
- 6 eggs
- 1 cup half and half
- 2 tablespoons green onions, chopped
- Salt and pepper
- Butter to grease pan
- 6 slices of Texas Toast (thick cut, crusty white bread)
- 1 pound spicy pork sausage, cooked and drained of fat
- 1 cup grated Cheddar cheese
Smoked Salmon Omelette

Directions Mix the eggs and milk together add the dill
- 4 Large Eggs
- 150 grams Smoked Salmon
- 1 floz Milk
- 1 tsb Dried Dill
- Low Fat Cheddar Cheese(grated)
- 0.5 tbsp Extra Light Olive Oil
Cucumber Salad In Vinegar

Directions Slice onions and cucumber very thin slices & place in shallow dish
- 3-5 persian cucumbers (with peel) (or regular cucumbers without peel or "striped")
- 1 red onion
- 1/2 c. white vinegar
- 1/2 c. water
- 1/3 c. sugar
- dash of salt and pepper

- 44 lbs. potatoes
- 5 tbsp. salt
- 2 1/2 gal. cream sauce
- 4 1/2 c. melted butter or oleo
- 2 1/2 gal. hot milk
