  • 1 head kale, washed and dried
  • 2 tablespoons olive oil
  • flaky gourmet salt
  • 1 .Preheat the oven to 275 degrees F. 2.Remove the ribs from the kale and cut into 1 1/2-inch pieces. 3. Lay on a baking sheet and toss with the olive oil and salt. 4.Bake until crisp, turning the leaves halfway through, about 20 minutes.

  • 1/4 cup unsweetened almond milk (you could also use skim milk)
  • 2 1/2 cups (1/4-inch-thick) slices zucchini
  • Cooking spray
  • Instructions
  • Preheat oven to 425 degrees.
  • Combine first 5 ingredients in a medium bowl stirring with a whisk.
  • Place milk in a shallow bowl. Dip zucchini slices in milk and dredge in breadcrumb mixture.
  • Place coated slices on an oven proof wire rack coated with cooking spray; place rack on a baking sheet.
  • Bake for 30 minutes or until browned and crisped.
