Banana Bread

Preparation: Turn crockpot on high
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup cropped pecans, lightly toasted
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 4 small ripe bananas, mashed
- 2 tablespoons plus 2 teaspoons milk
- 1 teaspoon vanilla
Dip - Guacamole

Scoop out avocado from skins and mash in a bowl with a fork
- 2-3 medium avocados (when I diced them, I got about 1 1/4 C)
- 1 T Fresh lime juice
- 1 t. fresh minced garlic
- 2 T finely minced onion
- 1/4 c. Sour Cream
- Salt (and pepper if you like) to taste
- Optional: 3-4 T finely diced tomatoes (If I happen to have them I add them, if I don’t, I don’t!)
Mashed Potatoes “Chantilly"

1. Preheat the oven to 375F
- Equipment
- 13 by 9 by 2" baking dish
- Ingredients
- 41/2-5 pounds Idaho Russet potatoes, peeled and cut into 1" chunks (Note: please make sure the potato chunks are all relatively the same size to assure even cooking time)
- Kosher salt to taste
- 3/4 cup whole milk
- 1 stick butter, cut into slices, plus 1 additional tablespoon butter for greasing the baking dish
- 1 tablespoon unseasoned breadcrumbs
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese

In a large bowl, combine all salad ingredients except cilantro springs; mix well
- 4 Cups shredded green cabbage
- 1 Cup shredded red cabbage
- 1/4 Cup chopped red onion
- 2 Jalapeno chiles, seeded and finely chopped (wear plastic gloves to protect
- hands, and don’t touch face or eyes.)
- 2 Tablespoons chopped fresh cilantro
- 1 11-ounce can Green Giant Mexicorn Whole Kernel Corn, Red and Green
- Peppers, drained..
- 4 ounces (1 cup) shredded Cheddar cheese
- Fresh cilantro sprigs
- DRESSING
- 3/4 Cup purchased ranch salad dressing
- 1 Tablespoon fresh lime juice
- 1 Teaspoon cumin.

- 1/2 cup oil
- 1/4 cup vinegar
- 1 tsp. dry mustard
- 1/2 tsp. celery seed
- 1 tsp. salt
- 1/4 tsp. pepper

- 2 lb. baby red potatoes, quartered
- 1/2 cup KRAFT Real Mayo Mayonnaise
- 1/4 cup buttermilk
- 2 Tbsp. chopped fresh chives
- 1/2 cup KRAFT Shredded Sharp Cheddar Cheese
- 8 slices OSCAR MAYER Bacon, cooked, crumbled
