- 1 large onion, diced
- 4 carrots, diced
- 2 celery stalks, diced
- 1 clove garlic, minced
- 1/4 teaspoon dried thyme
- 2 bay leaves
- 2.5 cups lentils
- 12 cups chicken broth
- 2 cups chopped spinach, chard or kale {2oz}
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
ROTISSERIE CHICKEN AT HOME

Place all of your ingredients in a small bowl and stir in water by the teaspoon until a paste forms
