- 2 cups baby spinach, sautéed in 1/2 tablespoon olive oil until wilted {2oz}
- 1 cup grated provolone cheese {4oz}
- 2 cups Dry Curd Cottage Cheese {I use Friendship Farmer’s Cheese}*
- 3 tablespoons plain yogurt or almond milk*
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 2 tablespoons grated Parmesan cheese
- You can use 2 cups ricotta in place of the dry curd cottage cheese and plain yogurt

- 2 cups sugar
- 6 tablespoons cocoa
- 1/2 cup butter
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 1 cup shredded coconut
- 3 cups rolled oats
RICH’S FAVORITE MEATBALLS

Mix all ingredients together and form into balls
- 1 lb. ground beef
- 1/4 lb. jimmy dean sausage
- 1/2 heaping cup dry bread crumbs
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/8-1/4 teaspoon allspice
- 1 pinch of sage
- 1 medium onion, chopped
