JANINE’S BREEZY BEAN BUFFALO CHILI

In heavy skillet, cook meats, onion and green pepper until meat is browned and vegetables are tender
- 2/3 lb. ground buffalo
- 1/3 lb. ground beef
- 1 cup chopped onion
- 3/4 cup chopped green pepper
- 1 can Mexican style tomatoes
- 1 can kidney beans
- 1 {8oz} can tomato sauce
- 1 teaspoon salt
- 1-2 teaspoons med-hot chili powder
- 1 bay leaf
BEEF STEW {janine}

On wax paper, coat meat with flour, reserving left over flour
- 2.5 lb. beef stew meat
- 1/3 cup flour
- 1/3 cup canola oil {2.5oz}
- 1 large onion, chopped
- 1 garlic clove, minced
- 3 cups water
- 4 beef bouillon cubes
- 1 teaspoon salt
- 1/2 teaspoon Worcestershire
- 1/4 teaspoon pepper
- 5 medium potatoes, chunks
- 1 lb. carrot chunks
- 10 oz. frozen peas
MEXICAN CHEESY CHICKEN DIP

This is a nice party dip with a healthy amount of vegetables *½ c
- Garnishes:
- 1 lb. shredded, cooked chicken;ground beef; or cooked chorizo sausage
- 1 tablespoon olive oil
- 1 cup chopped red onion
- 1 green bell pepper, diced
- 1 Tbsp. minced fresh garlic or 1 t. dried minced garlic
- 1 can black beans, drained
- 1 can pinto beans, drained
- 16 oz. frozen corn kernels
- 1 {8oz}can enchilada sauce or 8oz. tomato sauce + 2 t. regular chili powder
- 1 cup salsa
- 1/4 c. chopped fresh cilantro or 1 T. dried
- 1-2 teaspoon adobo seasoning
- 1 teaspoon fajita seasoning
- 1/2-1 tsp. fresh ground pepper, to taste
- 6 oz. grated Monterey Jack cheese
- 6 oz. grated sharp cheddar cheese
- 2 cups diced tomato {2 large}
- 1 cup sour cream {8.5oz}
- 1/2 cup chopped fresh cilantro
- 1 avocado, chopped
- Tortilla chips for dipping
BLACK BEAN BROWNIES {dr oz}

The black beans add fiber and moisture to this lightened up treat
- 2 sprays cooking spray, flour-variety
- 1/2 cup canned black beans, rinse, drain
- 1/4 cup black coffee, strong
- 1/2 cup unsalted butter
- 4 oz. bittersweet chocolate
- 4 large eggs
- 1.25 cups sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon table salt
- 1 cup all-purpose flour

Heat oil in a Dutch oven over med-heat
- 2 tablespoons olive oil
- 1 cup chopped leeks or onion
- 3 garlic cloves, chopped
- 2 teaspoons ground cumin
- 1 teaspoon cumin seed
- 1 lb. ground turkey sausage
- 3 cups chopped cooked chicken
- 2/3 cup barley
- 2 cans garbanzo beans
- 2 teaspoons pickled jalapeno
- 6 cups chicken broth
- 4-8 cups chopped kale {opt}
- 2 oz. shredded Monterey Jack or Cheddar cheese
- Chopped green onions
- Sour cream
PARMESAN CHICKEN BAKE

Preheat oven to 375°F and spray the inside of a 9×13” glass pan
- 6 chicken breasts
- 1 cup light mayonaise or greek yogurt {or 1/2 of each}
- 1/2 cup fresh parmesan cheese +
- 1 1/2 teaspoons seasoning salt
- 1/2 teaspoons pepper
- 1 teaspoons garlic powder

- 1 tablespoon canola oil
- 1 small onion, chopped
- 3 green onions, chopped

- 4-6 oz. feta cheese, crumbled
- 1 cup cottage cheese
- 1 egg
- Salt and pepper to taste
- 1 lb. phyllo, thawed {or cups}
