- TOPPING:
- 1 cup brown sugar
- 2 eggs
- 1 ⁄2 cup vegetable oil
- 1 ⁄3 cup water
- 1 (15-ounce) pumpkin puree
- 1 3⁄4 cups plain flour
- 1 teaspoon baking soda
- 1 ⁄2 teaspoon baking powder
- 1 teaspoon salt
- 1 ⁄4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1 tablespoon butter
- 1 ⁄4 cup brown sugar
- 3 tablespoons milk
- 1 ⁄4 cup pecans, chopped

- 3-4 frozen chicken breasts
- 2 cans condensed cream of chicken soup
- 4-5 medium potatoes, peeled and diced
- 2 cups frozen peas and carrots or mixed vegetables
- 1 Chicken bullion cube
- Salt and Pepper to taste
- Optional Seasonings: 1 bay leaf, 1 tsp dried parsley, 1 tsp onion powder
- 1/2 -1 cup shredded cheese
- 1 Recipe of Bisquik biscuits or 1 can of biscuits (or you can totally make yours from scratch. It’s just not as fast :) )
Vegetable Lasagna

- 3 large shallots, peeled and cut into 1/2-inch-thick slices
- 2 pounds baby pattypan squash
- 2 pounds sliced zucchini
- 10 Fresh Cremeni mushrooms or button mushrooms stimed and sliced (Optional)
- 4 tablespoons olive oil, divided
- 3/4 teaspoon salt, divided
- 3/4 teaspoon black pepper, divided
- 2 pints cherry tomatoes
- 1/4 cup chopped fresh basil
- 2 tablespoons chopped fresh chives
- 2 teaspoons minced fresh garlic (if it is from a jar use 1 tsp of garlic)
- 4 cups chicken broth
- 5 tablespoons all-purpose flour
- 1 cup heavy whipping cream
- 2 tablespoons Dijon mustard
- 1 large egg, lightly beaten
- Cooking spray
- 15 cooked lasagna noodles
- 3 1/2 ounces grated fresh Parmigiano-Reggiano cheese (about 2/3 cup)
- 6 ounces fontina cheese, shredded (about 3/4 cup, packed)
- 2 tablespoons torn fresh basil

- 2 cups sugar
- 1 cup water

- 4 boneless skinless chicken breasts
- 8 asparagus spears
- 4 slices mozzarella cheese
- Madeira Sauce

- 2 cups sliced fresh mushrooms
- 3 cups madeira wine
- 2 cups beef stock
- 2 cloves of garlic minced
- 1 tablespoon butter

Classic Coq Au Vin

Warm and comforting chicken braised in red wine-the best of French country cooking!
- Olive Oil- 1 tbsp.
- Pancetta or Bacon lardons (cubed)- 120 gr/4 oz.
- Chicken thighs and legs- 8-10 pieces
- Onion- 1 large
- Carrots- 2 medium
- Garlic (chopped)- 1-2 cloves
- Brandy or Whisky- 1/4 cup
- Red Wine (your choice)-1/2 bottle
- Chicken Stock- 1 cup
- Thyme- 8-10 springs
- Butter- 1 tbsp.
- Flour- 1 1/2 tbsp for thickening (could substitute for corn starch for gluten-free version)
- Mushrooms- 250 gr/ 1/2 pound
- Salt and Pepper to taste

- 1 Can of Cranberry Sauce (can use mixed berry)
- 1 packet of Lipton Onion Soup Mix
- 8 oz of French Dressing or Russian, or Catalina, or just 1/3 cup orange juice. Also two jars of Heinz Chili sauce would be good and less sweet and a little more zingy.
