These (safe) cookie dough truffles are a must-make
- 8 tbsp. unsalted butter, at room temperature
- 3/4 cup light brown sugar, packed
- 2 1/4 cup all-purpose flour
- 1 (14 oz.) can sweetened condensed milk
- 1 tsp. vanilla extract
- 1/2 cup mini semisweet chocolate chips
- 1 1/2 lb. semisweet (or bittersweet) chocolate, coarsely chopped
- Mini chocolate chips (for garnish)
CUCUMBER BITES APPETIZERS

Suggest a flavored cream cheese an dilute with some additional plain cream cheese
- 2 – Cucumbers
- 12 – cherry tomatoes
- 4 oz. – cream cheese softened
- 1 tbsp. – mayonnaise
- 3 tbsp. – light ranch
- 1 tbsp. – frozen or fresh dill
- 1/4 tsp. – garlic salt
- Black pepper for garnish

In medium nonreactive bowl whisk vinegar, honey, Dijon mustard, vegetable oil, poppy seeds and mayo
- NOTE: For a strawberry poppy seed dressing:
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1 tablespoon plus 1 teaspoon Dijon mustard
- 1/3 cup vegetable oil
- 1 tablespoon poppy seeds
- 3 tablespoons mayo
- Salt & pepper to taste
- 1 lb mixed salad greens including spinach, romaine and spring greens
- 1/4 of a large red onion very thinly sliced
- 1/2 lb. strawberries sliced
- 2/3 cup chopped walnuts (You could use pine nuts instead)
- 3/4 cup feta cheese or goat cheese
- 4 slices crispy cooked bacon crumbled
- 8 oz strawberries, fresh or frozen and thawed
- 2 tablespoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon poppy seeds
- 1 Tbsp Pine Nuts
