- 6 cups chopped mixed stone fruit (apricots, cherries, peaches, plums)
- 2 tablespoons honey
- 1 tablespoon minced fresh basil
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- Pinch kosher salt
- Cinnamon Chips:
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 6 (8-inch) flour tortillas
- 4 tablespoons (1/2 stick) unsalted butter, melted

- 1 1/2 cups masa harina
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon coarse salt
- 1/2 cup grated cotija cheese (can substitute fresh grated parmesan cheese)
- 2 cups coarsely chopped fresh or frozen corn kernels. Approximately 2 large ears of corn.
- 1 cup warm water - use only as much as you need
- 5 tablespoons vegetable oil for frying

- 1/2 cup granulated sugar
- 2 egg yolks
- 1 teaspoon lime or lemon zest

- 2/3 cup corn meal

- 2 10 oz. cans sliced mushrooms
- 1 tsp. oregano
- 1 C. cottage cheese
- 3 C. grated Parmesan
- 2 eggs, slightly beaten
- 2 tsp. oil
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 C. grated mozzarella
- 12 lasagna noodles

- 2 sticks unsalted butter, at room temperature, plus melted butter for pans
- 1 pound almond paste
- 1 cup sugar
- 1 teaspoon pure almond extract
- 6 large eggs
- 1 cup all-purpose flour
- Pinch fine sea salt
- 1 1/3 cups raspberry or strawberry jam with seeds
- 8 cups tinted Royal Icing, recipe follows, or store bought
- Decorative dragees, silver, gold, etc., for garnish
- 6 tablespoons corn syrup
- 2 tablespoons plus 1 teaspoon almond extract
- 17 1/2 cups confectioners' sugar (about 5 boxes)
- Green and violet food coloring (or your favorite colors)

- 1/4 c lime juice
- 2 T fresh cilantro, fine chop
- 1/4 t cayenne pepper
