Chocolate-Drizzled Strawberries and Cream Pie

In a medium bowl, beat the softened cream cheese, brown sugar, and vanilla until light and fluffy
- 1 quart fresh strawberries
- 1 8-oz. package cream cheese at room temperature (light is fine)
- 1/2 tsp. vanilla extract
- 1/4 c. packed light brown sugar
- 1 c. heavy whipping cream
- 1/4 c. powdered sugar
- 1 9″ graham cracker crust (store-bought or homemade)
- 1-2 ounces chocolate
Cranberry, Pineapple, Oranges Sauce

1.Place the cranberries in a medium-size sauce pot and add enough water to cover
- 2 cups fresh cranberries
- 1 (20-oz) can crushed pineapple
- 1 (11-oz) can mandarin oranges, drained
- 1 Tbsp raw honey
No-Bake Strawberry Icebox Cake

With a hand mixer or in the bowl of a stand mixer, whip 3 cups of cream until it just holds
- 2 pounds fresh strawberries, washed
- 3 1/4 cups whipping cream, divided
- 1/3 cup confectioners sugar
- 1 teaspoon vanilla
- 1/2 teaspoon rosewater (optional)
- 4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
- 2 ounces dark chocolate, finely chopped
Mini Toasted Strawberry Shortcakes

Toss the chopped strawberries, vanilla and 4 tablespoons sugar in a bowl
- 1/3 cup finely chopped strawberries, plus 24 whole small strawberries
- 1/4 teaspoon vanilla extract
- 6 tablespoons sugar
- 1 store-bought angel food cake
- 1 large pasteurized egg white
- 1/4 cup marshmallow cream, plus more for topping
- 1 teaspoon fresh lemon juice
- Pinch of salt
Cheese Ball

Mix the philadephia cream cheese, green pepper, onion, pineapple, and Lawrys season salt together
- 2 Blocks of Philadelphia Cream Cheese
- 1/3 cup finely chopped Green Pepper
- 1/3 cup finely chopped onions
- 1/2 cup drained crushed pineapple
- Lawrys season salt to taste

Caramel Sauce from Sweet Potatoes

Preparation Preheat heat oven to 425 degrees
- 3 pounds sweet potatoes, peeled and cut into quarters
- 1 cup water
- Will also need a cheese cloth
Monkey Bread - Gluten Free

Preheat oven to 350o F and grease a medium-size loaf pan
- Filling Ingredients:
- 3 egg whites
- 1 tablespoon oil
- 1/4 cup milk
- 1/2 cup rice flour (75 grams)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon sugar (stevia or splenda are also good)
- 1/4 teaspoon salt
- 1 3/4 teaspoons xanthan gum
- 1 tablespoon apple cider vinegar
- 1 teaspoon gluten free vanilla extract
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 4 tablespoons (1/4 cup) butter or margarine
Chocolate Graham Cracker Crust

Place all ingredients in a bowl, and mix until combined
- 1/3 1/3 1/3 cup butter, melted
- 1/4 1/4 1/4 cup brown sugar
- 1/4 1/4 1/4 cup unsweetened cocoa powder
- 1 1/4 1 1/4 1/4 cup graham cracker crumbs
Strawberry Jam

Wash and cut the strawberries into two halves
- 20 Strawberry - cut into two halves (stem removed)
- 150 ml sugar (based on the sweetness of strawberry)
- Juice of 1 lemon
- 1/2 cinnamon stick
- 2-3 cloves
- 1/4 cup water
Doug's Red Salsa

Mix all ingredients well and allow flavors to blend overnight for fullest flavor
- 18 Roma Tomatoes
- 2 Yellow Tomatoes
- 1 Green Bell Pepper, chopped fine
- 8-12 Jalepno small peppers, chopped fine or 4-8 large jalepno peppers
- 1/2 large onion, chopped
- 5 Garlic cloves, minced
- 3 Heaping teaspoons of Cilantro, chopped fresh
- 1/2 Teaspoon of salt
- 1/2 Tablespoon of pepper
- 2 Tablespoons of Chile powder (optional)
- 1/2 to 1 Teaspoon of lemon juice
- 3/4 capful vinegar
- 1/2 Tablespon ground chipotle pepper (optional)
