Sky High Strawberry Pie

In a large bowl, mash enough berries to equal 3 cups
- 3 quarts fresh strawberries, divided
- 1-1/2 cups sugar
- 6 tablespoons cornstarch
- 2/3 cup water
- Red food coloring, optional
- 1 deep-dish pastry shell (10 inches), baked
- 1 cup heavy whipping cream
- 4-1/2 teaspoons instant vanilla pudding mix
Strawberries and Cream Muffins

Preheat oven 400 Put paper liners in the cups of your muffin pan, or use nonstick baking spray liberally
- 1 cup whole milk (or, you can use something like 2/3 cup 2 percent milk, and 1/3 cup half-and-half mixed together)
- 1/2 cup unsalted butter
- 1 1/2 tsp. vanilla extract
- 1/8 tsp. almond extract
- 2 large eggs
- 2 cups AP flour
- 3/4 cup granulated sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup fresh ripe strawberries chopped into very small pieces (the redder and sweeter, the better!)
- 4 oz. full-fat cream cheese, very soft
- 1 and 1/2 Tbsp. of liquid from one whole egg, beaten lightly
- 1/3 cup granulated sugar
- 1/4 tsp. vanilla extract
Chili Chocolate-Covered Strawberries

In a heat-proof mixing bowl, add the chocolate, cream, and butter
- 6 ounces bittersweet chocolate, chopped
- 3 tablespoons heavy cream
- 1 tablespoon butter
- 1/8 teaspoon ground pure chili powder, such as ancho
- 10 large strawberries with long stems
Cranberry Sauce

Bring all ingredients to boil in a heavy medium saucepan, stirring often
- 12 oz bag fresh cranberries
- 1 cup sugar
- 1 cup water
- 2 1/4 tsp finely grated orange peel
- 1/2 tsp coarse kosher salt
Strawberry Danish - Gluten Free

Preheat your oven to 400°F
- Dough
- 2 2 2 teaspoons (6 g) instant yeast
- 2 2 2 tablespoons (24 g) sugar
- 1 1 1 teaspoon (6 g) kosher salt
- 3 3 3 tablespoons (42 g) unsalted butter, melted and cooled
- 3/4 3/4 3/4 cup (6 fluid ounces) milk, at room temperature
- For the Filling
- 1 8-ounce 1 8-ounce 8-ounce package cream cheese, at room temperature
- 1 1 1 egg (any size) at room temperature, beaten
- 1/4 1/4 1/4 cup (50 g) granulated sugar
- 1/8 1/8 1/8 teaspoon kosher salt
- 1 1 1 teaspoon pure vanilla extract
- 1/4 1/4 1/4 cup seedless strawberry jam
- 1/2 1/2 1/8-inch pound fresh strawberries, hulled and sliced 1/8-inch thick
- 1 wash (1 egg + 1 tablespoon water, beaten)
- Coarse sugar, for sprinkling (optional)
- For the Glaze
- 1 1 1 cup (115 g) confectioners’ sugar
- 1 1 1/4 tablespoon milk (any kind), plus more by the 1/4 teaspoonful if necessary
Banana Muffin - Gluten Free

1) Preheat the oven to 375°F
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon, optional
- 1 3/4 cups King Arthur Gluten-Free Multi-Purpose Flour or brown rice flour blend*
- 1/2 cup (8 tablespoons) soft butter
- 2/3 cup sugar
- 2 tablespoons molasses or honey
- 2 large eggs
- 1 1/2 cup very mashed ripe bananas (about 2 medium bananas)
- 1/2 cup chopped walnuts, optional
- See directions below for making your own brown rice flour blend.
Tortillas - Gluten Free

1) Add the dry ingredients to a large mixing bowl and mix the ingredients thoroughly
- 2 c. Gluten-free all purpose flour (or 2 c. White rice flour)
- 2 tsp. Xanthan gum or Guar gum
- 1 tsp. Gluten-free baking powder
- 2 tsp. Brown sugar
- 1 tsp. Salt
- 1 c. Warm water
Apple Pie, Caramel and Salted

1. On a lightly floured surface, roll 1 disk of dough into a 12″ round
- Flour, for dusting
- 1 recipe Flaky Butter Pie Dough
- 3 tbsp. flour, plus more for dusting
- 10 baking apples, such as Golden Delicious, Granny Smith, or Honeycrisp (about 3 pounds), peeled, cored, and thinly sliced
- 3 tbsp. plus 1 cup granulated sugar
- Juice of 2 lemons
- 8 tbsp. unsalted butter, cubed
- 1/2 cup heavy cream
- 1/2 cup Demerara sugar
- 1/2 tsp. Angostura bitters
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. ground allspice
- 1/4 tsp. ground cinnamon
- 1/4 tsp. Kosher salt
- 1/8 tsp. freshly ground black pepper
- 1/2 tsp. flake sea salt
- 1 egg, lightly beaten with 1 tsp. water

- 1/2 pound ground sausage
- 1 pound lean ground chuck
- 1 Cup Italian Bread Crumbs
- 1 Cup Grated Mozarella Cheese

- Sauce -
- 32 ounce container Prego traditional sauce
- 8 ounce can tomato sauce
- 2 Tablespoons sugar
