Broccoli and Rice Casserole

Mix together and bake at 350 for 30 minutes
- 1 Stick of Oleo
- 1 Medium Chopped Onion
- 1 Can cream of chicken soup (without water)
- 1 Cup of minute rice (uncooked)
- 8 ounce jar of chees whiz
- 2 packages frozen broccoli (cooked)
Whipped Icing - Similar to Walmart

1. Whisk powdered sugar, milk, and cream of tartar in a large bowl until smooth
- 2 cups of powdered sugar
- 1/4 cup of milk
- a pinch of cream of tartar
- 2 cups of chilled heavy whipping cream
Pie Crust - Cream Cheese

1.Soften cream cheese and butter and mix together incorporating flour a little at a time
- 1/2 cup cream cheese
- 1 1/2 cups all-purpose flour
- 1/2 cup butter
Grilled Chicken Penne al Fresco

1. Spray Deep Covered Baker with olive oil using Kitchen Spritzer
- 4 garlic cloves, peeled
- 2 cups grape or cherry tomatoes
- 3 cups uncooked mezze penne pasta
- 3 cups chicken broth
- 3/4 cup dry white wine such as Chardonnay
- 1/2 tsp each salt and coarsely ground black pepper
- 1 1/4 cups lightly packed fresh basil leaves, divided
- 1 oz Parmesan cheese, grated (about 1/4 cup packed)
- 2 cups diced grilled chickenbreasts
- Additional grated fresh Parmesan cheese and coarsely ground black pepper (optional)
Veal Piccata

- 1/2 cup all purpose flour
- 2 Teaspoons salt
- 1/2 Teaspoon freshly ground black pepper
- 4 Veal Scallops about 3/4 pound, pounded to a thickness of 1/8 inch
- 1 1/2 Tablespoons vegetable oil
- 5 Tablespoons butter
- 1 Cup dry white wine
- 1/2 cup chicken stock
- 1 garlic clove, chopped
- 1 lemon, juiced or more to taste (about 2 tablespoons)
- 2 Tablespoons capers, drained
- 1 Tablespoon chopped parsley leaves, optional, plus sprigs for garnish.
Cheeseball - Snowman

Mix packages of cream cheese with dried beef
- 2 (8 ounce) packages cream cheese, slightly softened
- 4 1⁄2 ounces dried beef, diced
- 1 bunch green onion (4-6 onion, chopped)
- 1 ⁄2 teaspoon garlic powder
- 1 teaspoon dried parsley
- 8 ounces whipped cream cheese
- 3 black olives, pieces
- 8 -10 dried cranberries
- 2 rosemary sprigs or 2 pretzel sticks
- 1 teaspoon horseradish
- 1 maraschino cherry (optional)
Cake Batter Cookies

makes about 2.5 - 3 dozen cookies
- 1 and 1/3 cup all-purpose flour
- 1 and 1/4 cup yellow or white boxed cake mix
- 1/2 teaspoon baking soda
- 3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg, at room temperature
- 1.5 teaspoons vanilla
- 1 cup chocolate chips (I used a blend of white and semi-sweet chocolate chips)
- 1/2 cup sprinkles
Mexican Lasagna

1 Heat oven to 375ºF. Cook and drain noodles as directed on package
- 10 uncooked lasagna noodles
- 1 pound lean ground beef
- 1 medium onion, chopped (1/2 cup)
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground red chilies
- 1 container (15 ounces) ricotta cheese
- 1 jar (24 ounces) Old El Paso™ salsa (any variety)
- 1 cup shredded Monterey Jack cheese (4 ounces)
Tri Color Pasta Salad

- 1 (12 oz.) box tricolor rotini (or your desired pasta)
- 1 (16 oz.) bottle Zesty Italian Dressing
- 1 (4-6 oz.) package Genoa salami, quartered
- 1 red bell pepper, small diced
- 1 green bell pepper, small diced
- 1 yellow bell pepper, small diced
- 1 cup baby carrots, sliced into small pieces
- 1 cup cherry or grape tomatoes, halved
- 1 (8 oz.) container mozzarella pearls (found in deli; or small-diced fresh mozzarella)
- 1 cup fresh curly or flat-leaf parsley, finely chopped
