Chicken Rub

A rub used on a 3-4 lb chicken that is put in the microwave for 30 minutes
- 1 Tablespoon of flour
- 1 Teaspoon paprika
- 1/2 Teaspoon of Garlic Powder
- 1/2 Teaspoon of Salt
- 1/4 Teaspoon coarsely ground black pepper
- 1/4 teaspoon dried thyme leaves
Maley Spaghetti Sauce

Bring water in a large sauce pan to a boil
- 10 Medium to large tomatoes
- Meatballs
- 1 Can Tomato paste
- 1 Clove garlic
- 1 tablespoon diced onion
- 2 Bay leaves
- 1 Teaspoon Oregano
- 1 Tablespoon Basil
- 2 Tablespoon of parsley
- 1 teaspoon sugar
Pan-Seared Chicken Breasts with Creamy Lemon Sauce

1. Cut lemon into four ¼-in
- Chicken
- 1 lemon
- 4 bone-in, skin-on chicken breasts (10-12 oz/300-350 g each)
- 1 tbsp (15 mL) Greek Rub 1 tbsp (15 mL) olive oil
- Orzo and Sauce
- 8 oz (250 g) uncooked orzo
- 6 oz (175 g) fresh baby spinach leaves (about 8 cups/2 L)
- 1 lemon
- 1 can (10 3/4 oz/284 mL) condensed cream of chicken soup
- 1 tbsp (15 mL) Greek Rub
Salsa

- 3 cups of grape tomatoes
- 1 cup of chopped onions
- 1/2 teaspoon of salt
- 1 teaspoon of lemon juice
- Fresh Cilantro to taste
- 1 jalepno pepper
Peanut Butter Brownies

One bowl bar brownie cookie
- 1 stick butter
- 3/4 cup peanut butter
- 1 3/4 cups sugar
- 1 1/2 teaspoons vanilla extract
- 4 eggs, slightly beaten
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups chocolate chips
Beer Bread

Preheat oven to 375 degrees
- 3 cups flour (sifted)
- 3 teaspoons baking powder (omit if using Self-Rising Flour)
- 1 teaspoon salt (omit if using Self-Rising Flour)
- 1/4 cup sugar
- 1 (12 ounce) can beer
- 1/2 cup melted butter (1/4 cup will do just fine)

Mexican Rice

- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 1/2 cups basmati rice
- 1 (8-ounce) can tomato sauce
- 1 1/2 cups chicken broth
- 1 cup corn kernels
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 Roma tomatoes, diced
- 2 tablespoons chopped fresh cilantro leaves
