Mashed Cauliflower (Paleo)

1. Cook the cauliflower according to the package directions until it’s very soft, but not waterlogged
- 1 bag (16 ounces) frozen cauliflower florets
- 1 garlic clove, crushed (about 1 teaspoon)
- 1 1/2 tablespoons coconut oil
- 1/2 cup coconut milk
- salt and black pepper, to taste
- 1 tablespoon plus 2 teaspoons dried chopped chives
Zucchini Pancakes

(This recipe make approximately 5 large or 10 small pancakes
- 1 Tbsp coconut flour
- 3 eggs
- sea salt & pepper to taste
- 2 cups shredded zucchini (a food processor
- with a shredding disc makes this easy)
- coconut oil or bacon grease to pan-fry in
- (amount will vary)
Seedy Spiced Protein Bites (Paleo)

Process all ingredients in food processor Shape into a roll, wrap in parchment paper place in ziplock bag Freeze
- 20 dates, pitted
- 50 g shredded coconut
- 150 g toasted sesame seeds
- 4 tsp cinnamon
- 2 tsp ginger
- 4 tablespoons melted coconut oil
- 1 tablespoon honey
- 1 tsp sea salt
Maple Coconut Chocolates (Paleo)

Heat the coconut oil until liquid and stir in the maple syrup
- 1 cup coconut oil
- 1/2 cup cocoa powder
- 4 tbsps maple syrup
- 2 tsps vanilla extract
Bread - sunflower

Preheat oven to 300 degrees
- 1/2 cup ground flaxseed
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups sunflower seeds, plus 2 tablespoons
- 1/2 cup sunbutter, unsweetened
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Chile Verde

Cut pork roast into ½ inch cubes
- 2.5 lb pork shoulder roast, cut into 1/2 inch cubes
- 2 lbs tomatillos
- 2 cups chicken stock
- 2 tablespoons coconut oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 bunch cilantro
- Juice from 1 lime
- 1 jalapeno
- 1 tablespoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Sea salt to taste
Garlic-Lime Steak Lettuce Wraps

In a large mixing bowl, whisk together lime juice, zest, garlic, chili powder, sea salt & black pepper
- 1-2 limes Juice and zest
- 1 clove garlic, grated or finely
- minced
- 1/2 teaspoon chili powder
- Sea salt and black pepper to taste
- 1-1 1/2 lb skirt steak
- 1 head bib, butter, or Boston lettuce -
- leaves gently separated, rinsed & dried.
- TACO TOPPERS
- 2 dozen cherry tomatoes, halved (or one
- large tomato chopped into 1-inch pieces)
- 1 avocado, thinly sliced
- 1/4 cup chopped cilantro
Rutabaga Hash

Heat a frying pan (I used nonstick) on medium-high heat and add the fat
- 2 tablespoons of fat
- 1/2 cup diced onion (I used purple onion but you could use white or yellow onions or shallots, etc… If you use leaks or scallions just be careful not to burn them)
- 2 cups shredded rutabaga (To remove some of the liquid from the rutabaga you can squeeze it out in some paper towels or a clean dish towel.)
- 1/4 -1/2 teaspoon celtic sea salt
- pepper to taste
Taco Seasoning (Paleo)

Mix ingredients together
- Taco Seasoning:
- 1 tablespoon chili poweder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder, onion powder, oregano
- Pinch cayenne
Pumpkin Pancakes (Paleo)

blend ingredients together Cook in coconut oil/ghee/butter on a 300 degree griddle
- 2 c. nut butter (almond butter today)
- 2 c. cooked pumpkin/winter squash/carrots (i used canned pumpking today; i've used fresh roasted squash and carrots too)
- 10 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
